Oven Baked Sweet Potato Chips
Guilt-free snack! These chips are made without any fat. For attractive circular chips, look for sweet potatoes that are round rather than long. I think these are even yummier than regular potato chips...

1 large sweet potato, unpeeled,washed,and dried (about 9 ounces)
salt & freshly ground black pepper

Heat oven to 200°F with two racks.
Line two baking pans with parchment paper, and set aside.
Slice potato crosswise, as thin as possible.
Arrange the slices on the prepared sheets, and keep them from touching as much as possible.
Sprinkle lightly with salt and pepper.
Cook for 50 minutes.
Slices will dehydrate and shrink; turn chips over, and rotate baking sheets if needed for even cooking.
Cook until slices are crisped and fluted around the edges and the centers are still orange, not brown, 30 to 40 more minutes.
Transfer to cooling racks, and cool chips on baking sheets.
(Chips will be soft when removed from oven and will crisp as they cool.) Store in an airtight container, at room temperature, up to 3 days.

Nutty Sweet Potato Chips
This is from Paula Deens home cooking show

2 large sweet potatoes
8 tablespoons butter, melted
1 cup honey-roasted peanuts, chopped
salt

Line large baking sheets with foil; lightly grease.
Slice potatoes to 1/4-inch thick.
Dip potatoes in melted butter and arrange on baking sheet so the chips do not overlap.
Sprinkle with peanuts.
Bake for 15 to 20 minutes.
Sprinkle with salt.

Microwave Sweet Potato Chips
This is a good healthy snack. I got the recipe from Diabetic cooking magazine.

2 cups sweet potatoes, thinly sliced
1 tablespoon brown sugar, packed
2 teaspoons margarine

Place sweet potatoes, in single layer, in microwavable dish.
Sprinkle with water.
Microwave at HIGH 5 minutes.
Stir in brown sugar and margarine.
Microwave at HIGH 2 to 3 minutes.
Let stand a few minutes before serving.

Baked Sweet Potato Chips:

2 lbs sweet potatoes, peeled and cut into 1/8 inch thick slices
1 1/2 teaspoons sugar
1 1/2 tablespoons lemon juice
1 1/2 teaspoons lowfat margarine, melted
1 tablespoon pepper

1. Combine all ingredients in a mixing bowl.
2. Layer potatoes in a baking dish coated with nonstick cooking spray (nonfat).
3. Add any remaining liquid from bowl and cover dish with foil and bake at 350 degrees F for 30-35 minutes.

Sweet Potato Chips

sweet potatoes
butter
seasoning salt
ranch dressing


Peel and cut sweet potatoes into thin slices (about 1/4 inch).
Grease with butter a cookie sheet.
Lay sweet potato slices on sheet and sprinkle with seasoned salt.
Bake at 425 degrees for 20 minutes.
Take out of oven and flip potatoes over.
With a stick of butter, butter the sweet potatoes and sprinkle with seasoned salt again.
Put back in oven 20 minutes or until very tender almost crisp.
Serve with ranch dressing.

Sweet potato chips.
INGREDIENTS:
2 medium sweet potatoes
ice water
oil for deep frying
salt
PREPARATION:
Directions for potato chips recipe
Peel potatoes; cut in half lengthwise then slice very thin with mandoline, slicer attachment of food processor, or knife. Place slices in a medium bowl and cover with ice water; chill for 1 hour.
Lift from water and drain on paper towels.

Heat oil to about 375° in deep fryer or about 1 inch deep in an electric skillet or deep skillet on stovetop. Fry potato slices in one-layer batches for a minute or two, or until golden brown. Lift chips out with slotted spoon and drain on paper towels. Sprinkle sweet potato chips with salt before serving.

I agree with the others. The oil needs to be hot first. The chips need to be sliced thin & pat dry. If you have an Asian market check for the different sweet potatoes that might be there in produce. There is a variety that cooks purple.... have fun.

SWEET POTATO CHIPS

Vegetable oil for deep frying
3 lb. sweet potatoes or yams, peeled
1 tbsp. coarse (kosher) salt
1 tsp. paprika
1/8 tsp. cayenne pepper

In large saucepan, heat 2 inches oil to 325 degrees F. In food processor or by hand, slice potatoes 1/16 inch thick; fry in batches 3 minutes, until golden (allow oil to return to 325 degrees F. between batches). Drain. In bowl, mix seasonings; toss with warm chips.
Makes 16 servings.

NEVERHAD SWEET POTATO CHIPS,,, I WOULD GUESS YOU WOULD SLICE THEM IN SLICES LIKE POTATO CHIPS AND MAYBE DIP IN A FLOUR MIX OF SORTS AND DEEP FRY! SOUNDS GOOD

u do da same way u fry french fries but i think its betta if u deep fry them.u cut da potato in thin strips den fry

I just thin slice 'em and spray with Pam, then bake 'til crispy.
