You could add some diced red onion or scallions, cucumber, tomato, parsley or cilantro.
As for a dressing you could use salsa w/ a little lime juice & olive oil or make a dressing with: lime juice, cumin, chili powder, olive oil, salt & pepper.

Okay, this sounds like the start of a mexi-style salad, which is some yum. But don't include any suggestions that don't fit in the ethnic style. It sounds great as is, maybe some sliced red onion, tomatoes, even black olives? The tastiest and healthiest dressing for this type of salad is freah salsa! Not a jar, buy the tubs in the refridgerated deli section. this makes me hungry!

A little shredded cheese, some crushed tortilla chips for "crunch," and either a lime vinaigrette (salad oil, lime juice, red wine or apple cider vinegar, salt, pepper, and sugar to taste) or a salsa ranch (regular ranch dressing with salsa mixed in, to taste). Now I'm hungry!

Sounds great! If you have some fresh grapes maybe half a few and toss those in. Any mushrooms? A lime based dressing with perhaps a little honey would be nice.
