Hi Golvor,
Place sugar in a clean dry container add slices of thick orange
peel leave in a well ventilated area for a day or so, a good hand
crushing will solve the problem, by this time the peel will have
crystallized so use in a citrus sauce the next time you have a
chicken dish or slice and have on a refreshing tuna salad

After the sugar is hard, you can soften it by placing a cup of sugar in a covered dish in the microwave and heating for 30 seconds or so. You may need to heat it more than once, but watch to see that it doesn’t start to melt. You can also heat the brown sugar on a metal pan in a regular oven at 250°F (120°C) for five minutes or so.

You can take a wedge of apple loosely wrapped in plastic and put with brown sugar in a air tight canister/container. The moisture from the apple will soften the sugar to it's previous soft state. Try this overnight. When you open container toss apple. Other method is to put sugar in 200 degree oven on cookie sheet for about 15 mins, that method will harden it back up if not used right away.

Add a piece of fresh bread to the sugar and let it sit for a couple of days. Your bread will get hard and your sugar will get soft! (make sure the sugar is in an air tight container).

To keep your sugar soft, keep a piece of bread in it replacing once it get really hard. (no, it doesn't go moldy )
