This is easy, flavourful and delicious!
Loosen the skin over the legs, without breaking it - slide you fingers down through the top of the leg, loosening the skin without puncturing it. Your goal is to creat "pockets" of the skin, unbroken, over the leg meat.
Finely chop one onion (really fine), one clove diced garlic, black pepper, salt and any herbs of your choice (parsley, basil, thyme, italian mix), and perhaps a dash of spice (cayenne, jalapenno). Add a tablespoon of citrus (could be orange, lemon, or lime juice) and a tablespoon of olive oil. Mix well and let sit for 1/2 hour.
Stuff mixture into leg, between skin and leg meat. Bake at 350 'til done.
Awesome! You can serve over rice and spoon the juice in the pan over it all, or cook a bit of pasta, add a bit pureed tomato to the pan juice and pour over the legs on pasta!

Roasted Smoky Turkey Legs:
1 day 30 min prep
10 servings
1 cup Morton Tender Quick salt
1/2 cup brown sugar
2 tablespoons liquid smoke
1/2 gallon water (or enough water to cover pieces)
10 turkey legs (turkey wings, whole turkey or whole chicken)
1. Mix the salt, brown sugar, liquid smoke and water together until all is dissolved and pour the briny mixture over the turkey legs.
2. Store in a covered container in the refrigerator for 24-hours to 72-hours.
3. Rinse the brine off the turkey, pat dry with paper towels and roast at 350°F for about 45 minutes.
4. By this time, the turkey will almost be done, but the skin will still have a pale color, so I crank the oven up to 500°F and roast the legs/wings until they are a rich mahogany color, then I flip them over and roast the other side until it is also deep brown.

Bake at 350 degrees , depending on leg sizes for approx 15 each side. For a more natural taste wait about 10 minutes into baking and baste with the juices that come from the meat : )
Or you can use chicken or turkey stock (broth)

TURKEY LEGS WITH MUSHROOM GRAVY
4 turkey legs (about 12 oz. each)
1/4 c. lemon juice
2 tbsp. oil
1 tsp. dried oregano
1 tsp. dried basil
1 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. pepper
MUSHROOM GRAVY:
1 c. water
1 tbsp. cornstarch
1 can (4 oz.) sliced mushrooms, drained
1 can (10 1/2 oz.) mushroom gravy
1 tsp. minced onion
1 tbsp. minced fresh parsley
1 tsp. garlic powder
Place turkey legs in a roasting pan. In a small bowl, combine lemon juice, oil and seasonings. Pour over turkey legs. Bake uncovered, at 375 degrees for 45 minutes or until lightly browned. Turn legs twice and baste occasionally. Remove from the oven.
For the gravy, combine water and cornstarch in a saucepan. Stir in remaining ingredients and bring to a boil over medium heat. Spoon over turkey legs. Cover loosely with foil. Bake basting frequently, for 1 hour or until legs are tender.
