there are about 3 or 4 main ways to do this.
#1. Find a local vw club. You are in a good position, most people want to swap their automatics for manuals. If you find a club in your area, im going to guarantee someone will be wanting a swap. Get to know the club members, and have them over one weekend and buy beer and food and have them help with a swap.
The price for that would be tranny fluid, beer, and food.
#2. Buy a wrecked beetle. This is going to be the second cheapest way to go. You can find them in junkyards for $600, take the parts you need, then either junk the rest of the car, or part it out on ebay or in http://www.vwvortex.com you could probably make enough to pay for the cost of the car.
#3. buy parts in a vw online forum. you can get some great deals on the parts you need, and no doubt about it, they will have a list of what you need. cost-$1000
#4. pay someone to get the parts and do the swap for you... easily-$2000-2500
parts-
flex plate, transmission, resovior, interior peices, ecu.... thats all the parts i can think of right now.

You would be better off looking for the same car with an automatic transmission instead. A conversion is expensive and could make it less reliable.
A cheaper way would be to find someone to show you stuff you can do with a manual transmission that is fun that you can't do with an automatic.

i agree, you'd be better off trading your car for another one identical to it but with the automatic gearbox. a conversion requires some holes to be filled welded and new lines and alot of mess to change it over when for less hassle and waiting time it's cheaper in the long run to get antoher with the automatic and trade yours in even for it.

Parts and labor cost roughtly $3,000 for a Toyota. VW... i don't want to imagine...
Bascially, it would be the same price as Replacing the entire Auto tranny if it broke. Dealers charges around $4,000 for that to be done...
