Lemon Berry Parfait

Ingredients:
8 oz. regular or custard style lowfat yoghurt
4 oz. fat free cream cheese
3 tablespoons fat free sour cream
1 tablespoon lemon zest
2 cups pre-purchased Angel food cake cut into 1inch cubes
3 cups fresh mixed berries - stories, raspberries, blackberries, and/or blueberries
1/2 cup chopped toasted almonds
2 tablespoons brown sugar

Directions:
1. In a small bowl, mix together the yoghurt, cream cheese, sour cream and lemon zest until well blended.

2. In 4 goblets layer each with the angel food cake, berries and yoghurt mixture. Sprinkle tops with the almonds and brown sugar.

To toast almonds: Place on a cookie sheet and bake 10 minutes at 325 degrees or til golden brown.
Servings: 4

Apple dumplings

peel and core 4 sharp apples
take a block of ready made, sweet short pastry
cut the pastry into four
and roll into 4 circles

grease a large baking tin or dish

place one apple, on a circle of pastry
fill core with sultanas +pecan nuts
sprinklr generously with brown sugar
and cinnemon
add a small knob of butteron top

damp edges of pastry, with milk
fold up around apple and seal ( repeat with other 3 )

carefully put all four apple dumplings,
into the baking tin or dish .

cook in a medium oven== for---1/2--3/4 of an hour
until, pastry is golden brown and apple is cooked

Test a skewer , push in easy

eat hot=== with custard or cream
or serve
cold ===with icecream
or
just as it is

Sticky Toffee Pudding

Sponge:
2oz soft butter
6oz granulated sugar
½ lb plain flour
1 teaspoon baking powder
1 egg
6oz stoned dates
½ pint boiling water
1 teaspoon bicarbonate of soda
1 teaspoon vanilla essence
Toffee:
2 ½ oz brown sugar
1 ½ oz butter
2 tablespoons cream


Cream butter and sugar. Beat in whisked egg with little flour to mixture. Continue to beat for a minute and mix in the rest of the flour and baking powder.

Flour dates lightly and chop finely. Pour boiling water over them. Mix in vanilla essence and bicarb. of soda. Add this to mixture and blend well.

Turn into a buttered dish. Bake 40 mins at 350° / Gas Mark 4.


For Toffee Coating:
Heat brown sugar, butter and cream and simmer for 3 mins. Pour over pudding.

Serve with cream or ice-cream.

Raspberry Cream Dessert

INGREDIENTS
1 (8 ounce) package cream cheese, softened
1/4 cup sugar
1/2 cup heavy whipping cream, whipped
1 (10 ounce) package frozen sweetened raspberries, thawed
1 tablespoon cornstarch

DIRECTIONS
In a small mixing bowl, beat the cream cheese and sugar until smooth. Gradually fold in whipped cream. Pipe mixture into two dessert dishes or spoon into two 4-in. springform pans coated with nonstick cooking spray. Refrigerate for 4 hours or until set.
Drain raspberries, reserving juice; set berries aside. Add enough water to the juice to measure 3/4 cup. In a small saucepan, combine cornstarch and juice mixture until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Cool slightly.
Stir in reserved raspberries. Cover and refrigerate until chilled. Serve with cream dessert.

Eton Mess (my version of):

Break up merrangue nests into small chunks
Chop and hull strawberries

In a large bowl combine the merrangue and strawberries with raspberries, a good quality vanilla ice cream (I use carte d'or) and cream and just mix it all up to make a mess and serve in small glass dishes.

Fruit Fluff -- Great hit with Kids

1 large container cool whip, thawed
I can pie filling, any flavor
1 can fruit cocktail, drained
1 can pineapple, drained
1 cup chopped walnuts, optional

Mix all ingredients well. Chill before serving. Top with colored miniature marshmallows before serving. This recipe can also be made sugar and fat free just look for sugar free/unsweetened ingredients or low-fat cool whip.

Blarney Stone-KISSed Cookies
Ingredients:
1 cup (2 sticks) butter or margarine, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/2 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1/2 teaspoon salt
QUICK COOKIE GLAZE(recipe follows)
HERSHEY'S KISSES Brand Milk Chocolates or HERSHEY'S HUGS Brand Chocolates
Directions:
1. Beat butter, sugar, egg and vanilla in large bowl until well blended. Stir together flour, cocoa, baking powder and salt; gradually add to butter mixture, beating until well blended. Divide dough in half; place each half on separate sheet of wax paper.

2. Shape each half into log with squared sides, about 7 inches long and 2-1/4 inches wide. Wrap each log in wax paper or plastic wrap. Refrigerate until firm, at least 8 hours.

3. Heat oven to 325°F. Cut logs into 3/8-inch thick slices. Place onto ungreased cookie sheet.

4. Bake 15 minutes or until set. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Remove wrappers from chocolate pieces.

5. Prepare QUICK COOKIE GLAZE; drizzle cookies. Immediately place a chocolate piece on each cookie. About 3 dozen cookies.


QUICK COOKIE GLAZE: Stir together 3/4 cup powdered sugar, 3 to 4 teaspoons milk, 1/4 teaspoon vanilla extract and 3 or 4 drops green food color, if desired, in small bowl until of drizzling consistency.

yes, i do a mean one! buy some amaretti biscuits, crush them up and layer them with the following- vanilla ice cream, creme fresh (mixed with a bit of sugar) and raspberries. If you layer it in a glass, it looks the bo**ocks. Add whipped cream if calories are not a wory.
