Stick to the good old beer, salt, pepper, garlic and cumin. If you want to add an interesting twist, add orange juice, I'm mexican and it's the best!!!

GOYA, a brand of latin foods is available in a lot of different grocery stores (I found it at Food 4 Less, which is owned by Ralphs) and makes a good marinade for steak, chicken & fish that contains bitter orange, garlic, lime and other seasonings...its called MOJO CRIOLLO and is under $5 for a large bottle...
