there is a carrot cake recipe that uses mayonaisse
I've tried this recipe before, very yummy!!
Easy Carrot Cake
1 cup KRAFT Mayo Real Mayonnaise
1 pkg. (2-layer size) yellow cake mix
4 eggs
2-1/2 tsp. ground cinnamon
2 cups finely grated carrots
1/2 cup chopped PLANTERS Walnut Pieces
BEAT mayo, cake mix, eggs, 1/4 cup water and cinnamon in large bowl with electric mixer on medium speed for 3 minutes. Stir in carrots and walnuts.
POUR into greased 13x9-inch baking pan.
BAKE at 350°F for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely. Frost cake if desired.

Depression Cake
Ingredients
1 cup (225g) raisins
2 cups (480mL) water
2 Tbsp (30mL) canola oil
1 cup (200g) brown sugar
1 cup (200g) white flour
1 cup (200g) whole wheat cake flour
1 1/2 tsp (7g) baking soda
1 tsp (5g) ground cinnamon
1 tsp (5g) ground nutmeg
Directions
Preheat oven to 325°F (162.7°C). Place raisins and water in a saucepan and cook over medium heat until water is reduced to about one cup (240mL). Set aside to cool. Cream sugar and oil by beating vigorously. Add raisins and liquid. Beat together until the mixture is smooth. Add flours, baking soda, and spices, and mix well. Bake in a lightly oiled 9-inch square (23x23cm) pan for 30–40 minutes.
Makes 9 servings.

Chocolate Mayonnaise cake
Ingredients:
2 cups sifted all-purpose flour
1 cup granulated sugar
4 tablespoons cocoa powder
2 teaspoons baking soda
1 pinch salt
1 cup mayonaise
1 cup water
1 teaspoon vanilla extract
Directions:
In first bowl, mix together the five dry ingredients. Set aside.
In a second bowl, mix mayonaise, water, and vanilla until lumps are gone and then blend together with the dry ingredients. Add 1/2 cup chopped walnuts nuts if desired.
Pour into a greased and floured 13" X 9" pan.
Bake 375 degrees for 20-25 minutes. This cake is very moist and tasty.
Another Mayonnaise cake recipe:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup cocoa
2 teaspoons baking soda
2 1/2 teaspoons salt
2/3 cups mayonnaise
2 cups water
1 teaspoon vanilla extract
Preheat oven to 350*F (175*C). Grease and flour 2 (8-inch) round cake pans; set aside.
Combine first 5 ingredients in large mixing bowl. Add mayonnaise, water and vanilla and mix well.
Pour batter into prepared cake pans.
Bake for 30 to 40 minutes or until wooden pick inserted in center comes out clean. Cool on wire rack for 10 minutes and remove from pans. Cool completely. Frost with a creamy white-type frosting.
Makes 10 to 12 servings.

A chocolate mayonnaise cake, made with mayonnaise in place of eggs and oil.
INGREDIENTS:

1/2 cup cocoa
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup sugar

1 cup water
1 teaspoon vanilla
PREPARATION:
Sift together the flour, cocoa, soda and salt. Cream together the sugar, mayonnaise, water and vanilla. Add dry ingredients to the creamed mixture; stir until well blended. Pour batter into greased and floured layer cake pans (or a 9- x 13-inch pan). Bake at 350°F. for about 25 minutes.
2 cups plain flour
4 Tbsp. cocoa powder
2 tsp. baking soda
l c. brown sugar
l c. mayonnaise
l c. cold water
1 tsp. Vanilla
Mix, do not beat. Place cake in flat loaf pan. Bake 30 minutes at 350°F.

Egg free cake

1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
5 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water
1/2 cup semi-sweet chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
In a large bowl, combine flour, salt, sugar, cocoa powder, and baking soda. Mix well with a fork, then stir in oil, vinegar, and vanilla extract. When dry ingredients are thoroughly moistened, pour in cold water and stir until batter is smooth. Stir in chocolate chips and pour batter into prepared pan.
Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted in center comes out clean. Cool on a rack.
