I would like to know how the greenhouse efffect helps the Earth and us.

The more CO2 u produce the better for the plants. It accelerates their growth . If we produce a little extra CO2 this month then next month the plants will grow more and be able to catch up.

Without some greenhouse effect the Earth would be permanently frozen in an ice age. So we need just the right amount to keep the climate as it is now.

It doesn't. The equilibrium (mean) temperature of the planet is given as

T=(P/4/s)^.25

where P is the solar constant (1366W/m^2) and s is the Stefan-Boltzmann constant (5.7E-8W/m^2/T^4). That equates to

T=(1366/4/5.7E-8)^.25=278K (5C).

Within the margin of measurement error, this is exactly what the global mean temperature is. Note that there is no atmospheric component in the calculation.

without it we would be as hot and cold as the moon ! like 300 below zero at night and 400 degrees in the day time
