If he did, I bet the number of pounds it weighed would be less than the number of times I've heard this question.
The answer is, you are playing with words.

Old question but I'll allow it.
You think you've found a paradox, have you? A self-defeating question that the unbreakable god theory can't handle?
Well, in this situation you have to introduce something that is reasonable and involves common sense. Free will. Free will has to exist, otherwise every criminal on trial has to be freed, because none of those crimes were their own responsibility.
So with free will, that has to be factored into God's creation (creation in 'theory' evolutionists, calm down). Now, the more intelligent question would be:
Can God created something that he himself could not destroy?
And now you have a logical answer: free will. God would never destroy free will, because then we would be forced to submit to him in thought, emotion, and purpose, which is not the case because there are obviously atheists.

If we wanted to create that he would, but if he would need to lift it he would make himself stronger or the rock less heavy so he can lift it. No problem!

This is the first time I've seen this question all day!
You do realize, don't you, that what you have here is not a theological question, but an exercise is faulty reasoning?
Read McInerney's "Being Logical," and you might be able to see where the flaw in your thinking lies.

If he could do anything, he would come up with a point of view so logical and reasonable that everyone could agree on it and we all would follow him
