The most wonderful thing I have heard of it is a locket with the bride/grooms childhood photo in it along with either a letter written by the bride or groom about being a child or a poem.

This in all probability wont help yet I have been given my mum and mom in regulation crystal vases with our names and date of the marriage engraved. As your mum does not like vegetation a vase is particularly ineffective yet what approximately something else engraved. Its a very good souvenir to remind them of the day x

I gave them pretty handkerchiefs and had them embroidered with our wedding date and a saying. My mom's said "for all the years you loving dried my tears" and my mother-in-law's said "thank you for raising your son to be the man of my dreams" they loved them!!!

a locket with a picture of her and you as a baby in it. or a peice of jewelry with your birthstone in it. Or something she collects (for example my mom collects angels so i think i am going to give her some sort of angel that represents motherhood)
