I'd like to do the whole floor in the bathroom using talavera tiles. I keep seeing them used as wall and backsplash tile. Is this just the way most people use them or is it a structural reason?

Check out the thickness of the tile. Floor tiles are thicker and thus more robust for weight-bearing. A wall tile is generally only decorative so it doesn't need much substance to show the decor... it isn't walked on... usually... except in Spiderman's house.
