Little League Casserole.

Alot of things you already have around the kitchen

1 Med Onion
2 Med Potatos
1# lean ground beef
1 can tomato soup
1 can pork and beans
4 slices bacon, raw
shredded cheddar cheese

Preheat oven to 350.
Slice onions and seperate into rings.
Put on bottom of 9X13 baking dish.
Thinly slice potatos.
Place on top of onions.
Add salt and pepper to taste.
Flatten raw hamburger and place on top of onion and potatos.
Spread pork and beans over hamburger.
Spread tomato soup over pork and beans.
Cut bacon into smaller pieces and arrange over tomato soup.
Bake 1 1/2 hours, do not cover.
Sprinkle cheese over top the last 15 minutes of cooking.

Meatballs with Orzo

This recipe is a combination of several old family favorites. Orzo is a rice shaped pasta that cooks nicely with the other ingredients so this is a one pot meal.

INGREDIENTS:
1 onion, chopped
1 Tbsp. olive oil
14 oz. can ready to serve beef broth
1 cup uncooked orzo pasta
1 lb. frozen cooked meatballs
14 oz. can Italian flavored diced tomatoes, undrained
4 plum tomatoes, chopped
1 cup freshly grated Parmesan cheese

PREPARATION:
In large skillet, cook onion in olive oil under tender. Add beef broth and bring to a boil. Stir in orzo, meatballs and tomatoes, stir. Return to boil. Cover and reduce heat to medium-low. Simmer 7-8 minutes until liquid is reduced, stirring occasionally.

Add plum tomatoes and cook 5-8 minutes until orzo is tender, stirring frequently. Sprinkle with cheese and serve. Serves 4-6

Spaghetti is one thing but if you want to go a bit further because you have eaten a lot of spaghetti already then get bocked cheddar cheese and grate it put enough of the grated cheddar aside and mix the remaining into your spaghetti bake put it into a casserole dish and sprinkle remaining cheese on it bake at 375 until top cheese is starting to turn brown and the mixed in cheese is melted, cut into squares and serve with salad.

My children like it but they joke and call it my poor mans lasagne

here are a couple of ideas
Easy Stroganoff

This is a wonderful meal and costs less than $5.00 to make!

1 lb. any meat; beef, turkey, steak, chicken even pork (leftovers work great!)
1 tsp. butter or oil
1 chopped onion (any size will do)
1 clove garlic, minced
1 can cream soup (mushroom or chicken)
1/2 c. water
1 c. sour cream (optional)
Egg noodles, or rice

Directions:

Prepare egg noodles or rice. In separate pan heat the oil or butter and sauté the onion and garlic until soft. Add meat and cook until done then drain of any extra fat. Add the soup and water, simmer until heated. Remove from heat and add sour cream if desired then serve over egg noodles or rice.

(Serving over toast is a good option too)


Classic Baked Penne Casserole


Next time you plan to make your usual spaghetti dinner for your family, try this delicious casserole recipe instead. It's still very frugal and can feed a crowd, the only extra expense will be for 2 cups of mozzarella cheese. Remember to buy the store brand and wait 'til it goes on sale.

8 ounces of Penne pasta, cooked and drained

1/2 pound ground beef, cooked and drained (add some spices while cooking if desired)

1 26-ounce jar of your favorite pasta sauce (or about 3 cups of your homemade sauce)

2 c. Mozzarella cheese, shredded (you can also add a little parmesan cheese if you have it on hand)

Parsley, dried or fresh and chopped

Salt and Pepper to taste

Directions:

* Preheat oven to 350 degrees.

* In a large bowl, mix together cooked pasta, beef, sauce and 1 c. of the shredded cheese.

* Place pasta mixture into baking dish and cover with lid or aluminum foil. Bake for 30-35 minutes.

* Take dish out of the oven and remove cover, top with remaining 1 c. of shredded cheese and sprinkle with parsley. Bake for another 8-10 minutes.

Makes 4-6 servings. This recipe can be double easily and cooked in a 10x13 baking pan.


Shepherd's Pie


While this is not a quick recipe to prepare and requires making a bit of a mess in the kitchen, it is pretty simple to make, very frugal, and absolutely delicious! It's also great for entertaining company and can easily be doubled using a 9x13 baking pan. Everyone always love my version of Shepherd's Pie (even our kids--who hate mushrooms), so I hope you will enjoy it too!

Ingredients:

1 lb. ground chuck (or regular ground beef, ground turkey or whatever's on sale)
1/4 medium onion, chopped
2 carrots, peeled and sliced diagonally
1 c. sliced mushrooms
6 medium potatoes, boiled and mashed (add milk, salt and butter as usual)
1 pkg. brown gravy mix
3/4 c. shredded sharp cheddar cheese

Directions:

Brown ground chuck with chopped onions and drain, then set skillet aside while finishing the next steps. In three separate pots cook carrots, sauté mushrooms in a dab of butter and prepare mashed potatoes if not already done.

Prepare gravy per package directions and add to ground beef, along with carrots and mushrooms. Cover and simmer on medium heat for a few minutes until thickened. Place beef mixture into a medium sized casserole dish and cover with mashed potatoes.

Drag a fork over the top of potatoes and sprinkle with the amount of cheese desired. The more the better (just be sure to buy it on sale!) Place in 350-degree oven just long enough to melt the cheese. YUM!!

A quiche. Pilsbury pie crust, eggs, cheese, milk, bacon.
Quesadillas - tortilla, cheese, onion. Warm in frying pan.
Also get cresent rolls, and wrap up stuff in those and bake. Pilsbury has some good ideas on their website. Kids like that stuff too.

My kids' favorite meal is Kraft Macaroni & Cheese. I make two boxes and then mix in two cans of tuna and a can of drained peas. It's like a cheesy tuna hotdish, but much faster and less expensive.
