When I make omlettes and such I only use the egg whites and it seems wasteful to me to just throw out the yolks (yes I could buy the egg whites in the carton but I do not want to) so I was wondering if anyone knows of anything good that I can do with egg yolks....

You can use egg yolks to colour your pastries on the outside! It gives this attractive, golden colour. Good enough, there wouldn't be any taste!

Make mayonnaise or other creamy sauces.

Of course if you are making egg white omelettes you are probably on a diet, so you may not want mayonnaise.
