the beta-cartene in the vegetable helps reduce risks of developing cataracts and macular degeneration.. but it doesnt help you see in the dark. Though,it has been proven that carotene deficiency in your diet can lead to a reduction of night-vision clarity.
i guess after a certain amount of beta-carotene you just turn orange and you dont really get any other added benefits.

What it actually helps with is the amount of time it takes for you to recover your abiltiy to see in the dark.

Picture yourself getting out of bed at night and stumbling ot the bathroom (you can see some - not great but some), you turn on the light take care of what needs taking care of and then when you turn off the light, for a moment you can't see anything at all. Carrots help miniimize that period of time.

The beta-carotene can help to improve what is known as 'night vision'
If you live in the country away from very bright lights of the city you can sometimes still see a lot of what is around even though there is a lack of light. This is known as night vision.

Somehow the beta carotene gets converted into vit. A which has been shown to improve night vision.

That's a lie. Carrots are high in vitamin A, which helps vision, and your skin, so it's good to eat carrots, but they don't make you see through things. I don't know why that turned into such a societal urban legend. If anybody would stop and think about it . . . .

Your mom didn't lie to you. She tried to instill a love of healthy food in you. She should be appreciated. Maybe she believed it, but if she did, that's not her fault. It's a soceity thing.

They can help eyesight a little bit, but they don't give you night vision.

If you consume too many carrots, you will literally start turning orange-ish and will tan a lot easier - this is due to the high amounts of aptly named carotene which will affects pigmentation. To do this, you'd have to consume a lot of carrots.

Yes, due to the vitamin A content. You need to have healthy rods and cones to see in colour and in black and white ( night vision) so vitamin A in carrots helps.
