My background is not Italian/Italian-American and we never ate out at Olive Garden much or any restaurant except Chinese or Japanese, so when we had a staff meeting that served an Italian themed dinner, and I was served Chicken Parmesan I was hooked.

It was a friend one night at an Olive Garden that taught me how to eat like an Italian. Yum!

Depending on the size of your T.O. you can cut this recipe in half:
Easy Chicken Parmesan

INGREDIENTS:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese

PREPARATION:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. In a skillet with a little olive oil over medium-high heat, brown on both sides until golden.
Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly.

Simplest method:

Buy a package of frozen breaded chicken breasts. Cook them according to the package, but for 5 minutes less than the package says.

In the last 5 minutes, slather on some spaghetti sauce (Hunts, Ragu, or your own creation), and put a slice of mozzerella cheese on top.

Keep baking it until the cheese starts to bubble.

Serve over cooked spaghetti or linguini.

you can buy pre-cooked frozen chicken. put it in the toaster oven on 450 degrees and cook for about 15-20 mins then put on the sauce, and as much cheese as you want. then while the toaster oven is cooling down put it back in just to melt the cheese.
