6 avocados (soft, but not mushy)
2-4 cloves garlic, minced (depends on how much you like garlic)
1 lime, cut in half
1 medium tomato, diced
1/2 medium onion, diced
salt
chopped cilantro (optional)
1 diced jalapeno pepper (optional) or serrano pepper (optional)
Cut avacados in half, remove pit, and spoon avocado into a mixing bowl.
Add minced garlic and squeeze the juice from one-half of the lime into the bowl of avacado.
Mash the ingredients together to desired consistency using the back of a large spoon or a potato masher (some like the avocado chunky, some like it smoother).
Fold in diced tomato and diced onion, a couple pinches of salt, and the juice from the remaining lime half (Also add cilantro or peppers at this time).
Cover the bowl and refrigerate for 30-45 minutes.
Uncover and taste.
Add salt as needed.
If you don't give the resulting guacamole at least 4 stars, then you ain't making it right.
NOTE: The purpose of the lime is to allow any leftover guacamole to retain its "avocado" color as it sits in the fridge.
Some folks use lemon, but it's been my experience that if you accidently add too much lemon, it seriously affects the guacamole's flavor; if you happen to add too much lime, the guacamole just gets a little more tangy.
If you find the leftover guacamole has darkened, simply stir it before eating and use more fresh lime juice next time.
Wholly guacamole may be used as a topper with tacos, enchiladas, fajitas, etc.
However, some say it is at its best with a bowl of warm tortilla chips and an ice cold beer

Dice the avacodo, onion, tomato and chili pepper. Finely chop some cilantro. Mix these together with a little salt, pepper and lime juice. Do not mash the mixture. It's much better chunky. Let it sit in the fridge for a few hours so the flavors will blend.

Guacamole
* 2 large ripe avocados
* 2 large ripe tomatoes
* 1 bunch spring onions
* 1-2 tbsp/15-30ml olive oil
* 1-2 tbsp/15-30ml lemon juice
* salt and freshly ground black pepper
* 2 green chillies
1-Remove the flesh from the avocados and mash. Skin the tomatoes, remove the seeds and chop
finely. Chop the spring onions.
2-Mix vegetables together with olive oil and lemon juice and season to taste. Garnish with

MEXICAN GUACAMOLE
2-3 Ripe Haas Avocados
½ t. Garlic Powder
½ t. Onion Salt
½ t. Diced Onion
1 T. Fresh Diced Tomatoes
1 T. Diced Green Chiles
Peel and pit avocados. Mash pulp and stir in remaining ingredients.
Guacamole
2 ripe Avocados, peeled and stoned
2 tomatoes, peeled, seeded and finely chopped.
6 Spring Onion, finely chopped.
1-2 fresh Chilli, seeded and finely chopped.
30 ml/2 tbsp fresh lime or lemon juice
15 ml/ 1 tbsp chopped fresh Coriander
Salt and freshly ground Black Pepper
Coriander sprigs, to garnish.
1- Put the Avocado halves into a large bowl and mash them roughly with a large fork.
2- Add the remaining ingredients. Mix well and season with salt and pepper. Serve
garnished with fresh Coriander

Pretty much all of the answers above are the same, and mine is very similar.
3 avocados
1 medium red onion (diced)
1 jalapeno pepper (diced)
1 tomato (diced)
1 bunch on cilantro (just the tops, finely chopped)
1 lemon
2 cloves of garlic (diced)
salt & pepper to taste
Cut avacados in half (length wise) and remove the pits (SAVE THESE FOR LATER!). Slice the avacode (while still in shell) into about eight equal peices (this makes the avacado easy to mash), spoon into bowl and mash with fork.
add tomatos, onion, garlic, jalapenos & cilantro, mix well.
roll lemon on cutting board to loosen the jucies, cut lemon in half and squeeze juice over the guacamole.
add salt and pepper to taste.
***at this time i usually add a couple of splashes of Tapitio hot sauce, but i like mine really spicy.
now, remember those pits from the avacados? set those in the quacamole, cover with plastic wrap and place in fridge until you are ready to serve. The pits prevent the guacamole from browning so that you can make it the night before if you need to.

2 avocados smashed in a bowl
1/4 small onion diced
lime juice (fresh is best)
tomato diced (optional)
Cilantro (chopped fine) also optional
Salt & Pepper to taste
Add all to bowl and stir!

Love-a the Guaca!
(Do you have a Wild Oats or Whole Foods to buy Organic items? if so, try it!)
ripe organic avocados, peeled and pitted
Juice of 1 organic lime
1 medium ripe tomato, diced (optional)
1/4 cup fresh cilantro, finely chopped
1/4 cup red onion, finely chopped
1/2 tsp. minced garlic
4 dashes Cayenne Pepper Sauce
1/2 tsp. ground cumin
1/2 tsp. sugar
Salt to taste
Parsley, chopped fine (optional for garnish)
Mash the avocados in a bowl with a fork until slightly lumpy. Stir in the lime juice, tomato, cilantro, red onion and garlic. Add the Tabasco (use extra if you like spicy), cumin, salt and sugar. Mix well. Sample and add more seasonings if desired.
Cover the bowl and chill or let stand at room temperature for one hour to allow the flavors to blend. Serve as you like it!

Guacamole:
Mash the meat of some avocados - leave it a little chunky. Stir in diced tomatoes, diced green onion, minced garlic, chopped cilantro, salt and pepper to taste. Spritz with a little lime juice to keep it from turning brown. (You can also add in some diced peppers to taste if you like.)

Instructions
Cut avocado in large chunks and mash coarsely in large bowl with a fork. Add remaining ingredients and blend gently - leaving some small chunks is fine. Taste and adjust seasoning with more pepper sauce, salt and pepper if desired.
