This is one of my FAVORITE potato side dishes, and it goes very well with ham *ham is probably the best choice for this dish*
INGREDIENTS
* 1 (2 pound) package frozen hash brown potatoes, thawed(you can also get them refrigerated, I believe they are called 'Simply Potatoes'
* 1/2 cup melted butter
* 1 (10.75 ounce) can condensed cream of chicken soup or cream of mushroom
* 1 (8 ounce) container sour cream
* 1/2 cup chopped onions
* 2 cups shredded Cheddar cheese
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2 cups crushed cornflakes cereal
* 1/4 cup melted butter
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, Cheddar cheese, salt and pepper. Place mixture in a 3 quart casserole dish.
3. In a medium saucepan over medium heat, saute cornflakes in 1/4 cup melted butter, and sprinkle the mixture over the top of the casserole.
4. Bake covered in preheated oven for 40 minutes.

I voted for all the previous answers from mine up.. they are all good. So now's for my side dish favorite... tomato star potato salads.. You take a tomato and cut the stem place out.. then cut down in quarters or smaller so that it forms a red star.. then put a scoop of potato salad in the center of your star. Its very pretty and so good in the summer time. You would cut your ham steaks down the middle so you have room on your plate for the star.. any space left could be for pickle, olive, green onion, carrot stick, any of those garnishes.. yuumm can't wait for summer.!

This question brought back childhood memories. We cured our own ham and for supper many nights we would have
Ham steaks, corn on the cob, fried potatoes and mustard greens. And whatever else was available from the garden. Yummy!!!!!!!!!!!!!!! Oh yes, must not forget that wonderful cracklin cornbread.
