1. Wash and drain the lettuce. (Head lettuce, like Iceberg.)
2. Remove any damaged or unappetizing out leaves.
3. Strike the counter top with the head sharply, stem down. Then twist out the stem.
4. Then using a deep bladed Chef's Knife, sharp, slice 1/4" slices off the head.
5. Then remove any unattractive pieces (I eat them), and toss the slices with a fork to break up the slices to loose lettuce. Sometimes you may want to cut the slices into pie wedges help the lettuce toss into smaller pieces.

I cut the desired amount up into chunks and put them in my food processor. I then pulse the lettuce until I get the desired consistency that I am looking for. This is quick and easy, and when you are done you can store the lettuce in your processor container or put the container in the dishwasher. You cannot get any more simple than that.

If you are speaking of iceberg lettuce... I take a knife and cut it in thin slices and then cut it some more depending on how small you want it.

Take off the outer leaves and some of the stem. With a sharp knife slice thinly.

Hi John,
Easy really, wash and peel, lay leaves on top of each other, roll
up very tightly and slice to the width you require toss with fingers
.......job done

buy it in the bag at the store or use a plastic knife so it will not brown the lettuce
