Their isnt enough for another dinner maybe a lunch for one person or two if they are small eaters. I need to do something though to give it moisture. My neighbor said to shred it up and mix it with katchup to make a sort of pulled beef sloppy joe thing. any suggestions?

sounds like a base for a good stew....water, carrots, potatoes, spices....for an Irish stew recipe see the link below....have fun with it...

try this
A wonderful meal using leftover beef stew or pot roast.

your favorite double-crust pastry
leftover pot roast, chunked
leftover veggies
brown gravy; leftover or jar
salt and pepper to taste

Fill your pie with leftover pot roast and veggies. Pout brown gravy evenly around the pie. Top with the other pie crust and seal edges. Poke a fork thru the top a few times accrossed the middle. Bake at 350 for about 30 minutes, or until the crust is golden brown.

Shred it and mix with bbq sauce to serve on a bun

Slice it really thin and place on a hoagie bun, top with some provolone cheese, tomato and lettuce

Mix with gravy and serve over rice or potatoes

Chop it up and Pour on some barbecue sauce- the one I like to use is called Sweet Baby Ray's. Then you'll have a nice barbecue beef sandwich.

slice the meat real thin or pull it apart w/ a fork and heat slowly in bbq sauce. Put it on a hamburger bun with coleslaw.

I say make a bbq sandwich with it.
Or you can shred it up add some veggies and rice and do a little stir fry action with it.

Chop it real thin and make a soup out of it.If it will feed 2 then you can feed 4 with a good hearty soup....
