Broccoli is good with chicken. I put mine in a microwave-safe bowl with a couple tablespoons each of water and butter and salt to taste. Cover with the lid or with plastic wrap and cook on high 7-10 min.

White & Wild Rice Pilaf
Prep Time: 20 minutes
Cook Time: 50 minutes
Serves: 8
Ingredients:
1 tbsp. olive oil
1 large onion, chopped
2 large carrots, chopped
2 stalks celery, sliced
2 cloves garlic, minced
3 1/2 cups Swanson® Vegetable Broth (regular or Certified Organic)
1/2 cup uncooked wild rice
1 cup uncooked regular long-grain white rice
2 tbsp. chopped fresh parsley
Directions:
HEAT oil in large nonstick skillet over medium heat. Add onion, carrots, celery and garlic and cook until tender. Stir in broth and wild rice. Heat to a boil. Cover and cook over low heat 25 min.
STIR in white rice. Cover and cook over low heat 20 min. or until rice is done. Stir in parsley.

Cous cous would be good with some steamed broccoli, carrots, and cauliflower. Here's a tip on the cous cous- boil it in chicken broth instead of water; this gives it more flavor.

buy a packet of al fredo sauce and fettucine add a little extra garlic, black pepper and parm to the sauce. Add a side salad: Caesar or sliced tomatoes with basil and extra virgin olive oil
