There are a number of excellent skirt steak rubs and marinades in the Weber Big Book of Grilling. Most recipies recommend grilling skirt steak quickly over a direct-high fire.

To calculate grilling times we use the cookout calculator at charcoalbob.com. Just enter the thickness of your skirt steak, the type of grill (gas or charcoal), the desired doneness, etc. and it will give you precise instructions for how to grill skirt steak.

After grilling, allow the skirt steak to stand for about 5 minutes to keep it juicy, then slice on the bias of the grain.

Skirt Steak Fajitas:

25 min 15 min prep
4-6 servings

1 tablespoon pepper
1 tablespoon garlic salt
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
2 lbs skirt steaks, tenderized and trimmed
12 (8 inch) flour tortillas, warmed
For the salsa
4 tomatoes, peeled
2 jalapeno peppers, roasted and peeled
1/2 onion, quartered
1/4 cup cilantro leaves
1 garlic clove, minced
1/4 teaspoon salt
Optional garnishes
guacamole (My recipe for Guacamole Guacamole or your favorite)
sour cream
sliced black olives

1. Combine first 4 ingredients (pepper - cayenne pepper) in a small cup and then rub over steaks. Cover and refrigerate overnight.
2. Prepare barbecue.
3. Grill steaks to desired degree of doneness (about 5 minutes per side).
4. Slice steaks across grain into thin strips and serve with tortillas, salsa (recipe below) and your favorite garnishes.
5. To make salsa: combine salsa ingrediens (tomatoes - salt) in a food processor and chop into finely chopped. Refrigerate at least 2 hours in a covered container.

Marinate it. They dry it a bit. Heat the a pan on hot (be careful) with no oil. Coat the steak in salt and pepper. Drop it in the pan and sear for a minute or two on each side. Pull it out while medium rare. Let it rest for a couple minutes and slice it against the grain in thin strips. Cut with the grain and it will be tough.

You have to cook this steak rare and marinate it, or it will be tough. If you cut withthe grain, it will be tough no matter how you cook it.

get the pan very hot just add salt to the meat and fry to desired doneness, slice against the grain and use in a tortilla with fried onions and green peppers with salsa and any other taco toppings you like corn or flour tortillas warmed either one is good you don't have to use oil on the skillet use like an iron skillet this gives the meat an almost grilled taste, or cook it in beer with potatoes and carrots in a crock pot for a Long time

marriate it in B-B-Q sause and then throw it on a grill after the grill preheat too as high as it can go

then let it sit of a min, then flip for a min, then turn off 1 burrner and put the steak over that burrner, then take off when it is too your liking

My marinade recipe for london broil:
Olive oil
Red wine vinegar
soy sauce
worcestshire sauce
freshly ground pepper
garlic
oregano
basil

broil or grill 6 mins a side

Marinate in soy sauce, worstashire,ground black peper, lemon juice, orange juice, and garlic powder. grill or slice first and stir fry and make Fajitas.
