Is your question trying to say that you are 'dating' your uncle 'romantically' or that you are simply 'going out with him to do something you both like to do'? Is this your 'biological uncle' or your 'informally adopted uncle' or even your 'formally adopted uncle?
If he is your 'biological uncle' (mother or father's brother or sister, or grandparent's brother or sister) and you are 'dating him romantically' then you MUST STOP IMMEDIATELY. There are laws against 'marriage' to someone who is so 'closely related' and there should be laws against any 'romantic partnership' between you, including a simple date. If your uncle is 'adopted' formally (in a court of law) then you need to 'check the laws in the state you reside in' to see if it is 'legal' to marry him ... and if it's not 'legal' then you should 'stop dating him.' If it is an 'informal adoption' then you 'may date him romantically' ... but only if it's something that YOU WANT to do, too.
IF this man is 'sexually abusing you' (having sex with you at all if you are under 18, or is 'touching you in private places') then you should 'call the police' and report it to them. That sort of 'behavior' is CRIMINAL and he could be doing the same thing with other 'young women' either related or not. You do not 'have to talk with your parents' before you report him, and you must decide if they will 'believe you' if you do 'complain' to them about this man's behavior to you ... or you may simply 'call the police' and tell your parents about it only when the police are there to 'investigate' your 'charges' against this man.
Now ... if your 'uncle' is simply wanting to 'take you out to have some fun' on a TOTALLY PLATONIC level, you should go and have fun ... the two of you should 'decide together' what you want to do, though ... and just 'have fun' with your uncle, and be glad he's 'taking you out' specially as a 'treat' for you.
