Shortly after my mother-in-law met my parents she pulled me aside to tell me how much she hated fat people and told me that she thought fat people were disgusting; my father is obese. She then wanted to organise further gatherings with my family for Christmas and other occasions. I have told my husband that I will never allow his mother anywhere near my parents ever again. Am I correct in taking this stand?

Absolutely...she was extremly rude..your husband needs to speak to her...she also sounds like a control freak...don't let her or anyone make decisions for you & your husband...do your own thing & don't feel guilty about "hurting someone's feelings"... your marriage will be better for it if it's just the two of you making the decisions.

What did you say at the time? Is it possible she is trying to improve relations with you? I'd have a heart-to-heart chat. It is always easier if everyone gets on, but that was a hard thing to say. She seems insensitive.

at some points yes and you need to tell your husband to educate your mother -in-law about this desease and she doesnt need to put people down just because they are fat,its a desease that needs understanding and acceptance

Unless she referred specifically to your father, I wouldn't make a big deal out of it. Everyone is entitled to their opinion, but as long as she doesn't disrespect your father don't make an issue of it, that'll create drama in your marriage you really don't want or need.

I was wondering what you said to her when she told you that. If you would like to stand up to your mother-in-law, you should speak up then.
