Banana Nut Bread (my recipe)

Mix together thoroughly
2/3 cup sugar
1/3 cup soft shortening
2 eggs

Mix together and stir in
3 TBSP sour milk (see recipe below)
1 cup mashed bananas (3 lbs =1 cup approx.)(Beat bananas to assure consistency)

Sift together and stir in
2 cups sifted flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt

Blend in
½ cup chopped walnuts

Pour into greased and floured 9” X 5” X 3” loaf pan. Let stand 20 minutes before baking. Bake at 350 degrees for 50 to 60 minutes or until it tests done (fork in center comes out clean).

Note- 1 cup grated apple (unpared) can be substituted for bananas to make Apple Nut Bread.

Sour Milk

Use ½ TBSP (1 ½ tsp.) apple cider vinegar to ½ cup milk. Let stand a few minutes. (For single recipe)

Add 1 TBSP apple cider vinegar or lemon juice to 1 cup milk. Let stand a few minutes. (Doubled recipe only)


Banana Cranberry Bread

INGREDIENTS

* 2 1/2 cups white sugar
* 1 cup shortening
* 3 eggs
* 3 mashed bananas
* 1 cup cranberry sauce
* 1/2 cup milk
* 1 teaspoon vanilla extract
* 4 cups all-purpose flour
* 1 1/2 teaspoons baking soda
* 1 1/2 teaspoons baking powder
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/2 cup chopped walnuts

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
2. In a large bowl, cream together the sugar and shortening until light and fluffy. Beat in eggs, and mix in bananas, cranberry sauce, milk, and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg. Gradually blend flour mixture into the banana mixture. Fold in walnuts. Pour into the prepared loaf pans.
3. Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely.

Cinnamon Apple Swirl Bread


Serving Size : 1

2 1/4 cups flour
1 tsp salt
2 TBSP Brown Sugar
2 TBSP Butter
1 TBSP Dry Milk -- Optional
1 tsp. Cinnamon
1 cup water -- or milk
1 1/2 tsp. active dry yeast
Filling:
1 Apple -- peeled, cored, and chopped into 1/4" dice
3 TBSP. Brown Sugar
1 tsp. Cinnamon
1 TBSP Flour
1/4 tsp. nutmeg -- optional

You can go one of two ways here: Either use the "Dough" setting, and roll up the dough with the filling, then bake in a conventional manner, or add some chopped apple at the beep. The first way looks better, the second way is easier.

Filling:
Mix all the dry stuff together, then toss over the chopped apple. Roll out the dough into a rectangle, then spread the mixture evenly over the rectangle. Roll the dough along the short edge, like a jelly roll.

Place in a greased loaf pan, let rise until doubled, about 45 minutes, then bake in a 350F degree oven for about 40 minutes, until the loaf is nice and brown, and sounds hollow when tapped.

Let cool on a rack, devour.

Fruit Cocktail Bread

1-1/8 c. fruit cocktail (with juice)
1-1/2 Tbsp. vegetable oil
3 Tbsp. extra juice from fruit cocktail
1/3 tsp. salt
3 c. flour
1 1/2 tsp. yeast

This recipe is for your bread machine and makes a 1-1/2 lb. loaf. Add the ingredients in the order listed and simply follow the instructions for your machine.

Cranberry Nut Bread

2 cups all-purpose flour
¾ cup granulated sugar
½ tsp. salt
1 ½ tsp. baking powder
½ tsp. baking soda
1 cup fresh cranberries, chopped (sometimes I add 1 ½ Cups)
½ cup pecans or walnuts, chopped
1 egg
2 TBSP. Canola or vegetable oil
¾ cup freshly squeezed orange juice
1 TBSP orange zest, minced

Preheat oven to 350 degrees. Grease a 9 x 5" loaf pan. Combine (whisk) the flour, sugar, salt, baking powder and baking soda. Add the cranberries and pecans and stir to coat with flour mixture. In a medium bowl, mix together the egg, oil, orange juice, and orange zest. Pour this egg mixture into the flour mixture and stir until just blended. Spoon the batter into the prepared pan. Bake for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes and then remove to a wire rack and cool completely.

PINEAPPLE NUT BREAD

(Liberia)
Yield: 10-inch loaf
The women of Liberia are excellent bakers. Pineapple Nut Bread is a favorite. This bread cuts better on the second day so plan to make it a day ahead. Slice it thinly and serve with cream cheese. It's a great change from our usual datenut bread.

In a 4-quart bowl:
Combine: 2 1/2 cups all purpose flour
1 cup bran
1 Tbs. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 cup chopped roasted peanuts (or walnuts).

Beat 2 eggs until light.
Add 3/4 cup crushed pineapple, drained.
Add wet ingredients to dry and stir thoroughly.

Bake at 350' in greased loaf pan for 1 hour. Test with toothpick. (When toothpick is dry, bread is done.)

Cinnamon Apple Bread

Serving Size : 1

1 1/4 cup Apple juice -- or apple cider
1 tsp salt
2 TBSP butter
2 TBSP brown sugar
3 cup flour
1 pkg active dry yeast
1 tsp cinnamon -- or more, to taste

This makes a 1.5 lb. loaf and works wonderfully in my Zojirushi.
I used the light crust setting.

This is the best-smelling loaf I've ever made.

.Zucchini Bread

Servings: 8
Preparation Time: 15 min.
Cooking Time: 60 min.

Ingredients:
4-1/2 tsp. unsalted butter, softened
1/2 cup sugar
1 large egg
1-1/2 tsp. orange zest
1 cup whole cranberry sauce
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
3/4 cup zucchini\cooked, grated
1/2 cup chopped walnuts


Cooking Directions:
Preheat oven to 350° F. Combine butter, sugar, and egg in a mixing bowl. Beat with an electric mixer until fluffy. Stir in orange zest and cranberry sauce. Combine next 4 ingredients in another bowl. Fold into butter mixture until just combined. Add zucchini and walnuts and stir until combined. Spread batter evenly into a buttered 8-0/1 inches loaf pan. Bake about 1 hour, or until tester comes out clean when inserted in center. Cool bread on a wire rack.

Lazarus Spinach Orange Bread

2 cups fresh spinach leaves(no stems)
½ medium size orange
3 extra large eggs
1 cup vegetable oil
1 ¾ cups sugar
3 cups flour
1 tsp. salt
1 tsp. baking soda
½ tsp. baking powder
¼ tsp ground nutmeg
¼ tsp. ground cinnamon

Wash spinach and drain well. Cut into 1/4-inch pieces. Grind entire orange half (peel and pulp), using meat chopper or blender.

Beat eggs in mixing bowl. Add oil and sugar. Mix well. Add cut spinach and orange; blend lightly.

Sift together dry ingredients, add to oil mixture and lightly blend. Pour into 2 greased loaf pans and bake at 350 degrees for 45 to 50 minutes or until a fork inserted into center of loaves comes out clean.Makes 2 loaves.

Lazarus Carrot Lemon Bread

½ medium size lemon
3 extra large eggs
1 cup vegetable oil
1 ¾ cups sugar
2 cups shredded carrots
3 cups flour
1 tsp salt
1 tsp. baking soda
½ tsp. baking powder

Grind entire lemon half (peel and pulp), using meat chopper or blender. Beat eggs in mixing bowl. Add oil and sugar: Mix well. Add carrots and lemon; blend. Sift together dry ingredients, add to oil mixture and lightly blend.

Pour into 2 greased loaf pans and bake at 350 degrees for 45 to 50 minutes or until a fork inserted in the center of loaves comes out clean. Makes 2 loaves.

Rhubarb bread (makes 2)

1 c. brown sugar
1/2 c. white sugar
2/3 c.veg. oil
2 eggs
1 c.milk
1 tsp salt
1tsp.vanilla
2 1/2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2 cups diced fresh rhubarb
1 c. chopped walnuts (optional)

Mix all ingredients together well. Pour into 2 greased 9X5 loaf pans and cook at 350 degrees for about one hour or until cake tester comes out clean.

Easy Fruit Loaf:

55 min 10 min prep
1 loaf

2 cups water
2 cups sugar
2 cups sultanas or mixed dried fruit
2 ounces butter
3 cups flour
1 teaspoon mixed spice
1 teaspoon cinnamon
1 teaspoon baking soda

1. Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves.
2. Allow to cool for a few minutes then stir in flour and spices and baking soda.
3. Pour into a large loaf pan which has been greased and floured or bottom lined with baking paper and bake at 350'F for 45 minutes or until a cake tester comes out clean.
4. Remove from oven and leave to cool in tin for 10 minutes then tip out onto a wire rack to finish cooling.
5. Serve cut in slices and buttered.

Fruit and nut chocolate chip loaf with hot chocolate
For the loaf
100g/3½oz dried apricots, chopped
150ml/5fl oz orange juice
100g/3½oz ground almonds
100g/3½oz butter
100g/3½oz light muscavado sugar
2 free-range eggs
175g/6oz self-raising flour
4 tbsp milk
50g/2oz glacé cherries, chopped
75g/2¾oz chocolate chips
75g/2¾oz pecans
icing sugar, to dust
For the hot chocolate
250g/9oz dark chocolate (70 per cent cocoa solids), broken into pieces
400ml/14fl oz milk
1 cinnamon stick
250ml/9oz condensed milk
225ml/8oz whipping cream, whipped until stiff peaks form when the whisk is removed

Method
1. Preheat the oven to 180C/355F/Gas 4.
2. For the loaf, place the apricots and orange juice into a saucepan over a high heat and bring to the boil. Reduce the heat and simmer for five minutes, or until the orange juice has almost completely evaporated. Remove from the heat and leave to cool.
3. Place the ground almonds, butter, sugar, eggs, flour and milk into a large bowl and mix well until a smooth dough is formed.
4. Add the cooled apricots, the cherries, the chocolate chips and 55g/2oz of the pecans and mix well.
5. Line a loaf tin with greased baking paper. Transfer the dough to the loaf tin and top with the remaining pecans. Transfer to the oven to bake for 50-60 minutes, or until cooked through, then remove and leave to cool.
6. Once the loaf has cooled, turn out onto a plate and dust with icing sugar.
7. For the hot chocolate, place the chocolate into a bowl resting over a saucepan of barely simmering water (make sure the water doesn't touch the bottom of the bowl) and heat until the chocolate has melted.
8. Place the milk and cinnamon stick into a clean saucepan over a very low heat and warm, without boiling, for 10-12 minutes.
9. Remove the cinnamon stick and whisk in the melted chocolate and the condensed milk until the liquids are completely combined and smooth.
10 To serve, pour the hot chocolate into a mug and top with a good dollop of the whipped cream. Serve with a slice of the loaf alongside

or Ale fruit loaf
500g/1Ib 2oz small currants
140g/5oz raisins
140g/5oz mixed peel
500ml/17fl oz bottle strong bottled beer, such as Black Sheep Brewery Riggwelter Strong Ale
180g/7oz soft dark brown sugar
150g/5½oz self-raising flour
180g/7oz wholemeal self-raising flour
3 tsp mixed spice
3 free-range eggs

Method
1. Put the dried fruit into a large pan and cover with the bottled beer.
2. Gently heat the fruit until the beer is hot, but not boiling. Remove from the heat, cover and leave overnight.
3. When you are ready to cook the loaf, preheat the oven to 140C/275F/Gas 1.
3. Add the sugar, flours, mixed spice and eggs to the fruit mixture. Stir well until all the ingredients are combined.
4. Divide the mixture between two greased 500g/1Ib 2oz loaf tins.
5. Bake for 1¼ hours until risen, pale brown and firm to the touch.
6. Cover with a tea towel and leave on a wire rack to cool.
7. Wrap the loaves tightly in cling film and keep in a cool, dry place for up to 6 weeks. This loaf is delicious buttered with raspberry jam or served with a piece of Wensleydale cheese

or Fruited bran loaf
55g/2oz bran
150g/5oz brown sugar
225g/8oz dried fruit
300ml/½ pint milk
175g/6oz self raising flour

Method
1. Put the bran, sugar and dried fruit into a bowl and mix thoroughly.
2. Stir in the milk, add the flour and mix well. Pour the mixture into a well-greased 450g/1lb loaf tin.
3. Bake at 180C/350F/Gas 4 for 75 minutes. Turn out of the tin and cool on a wire rack.
4. Serve sliced with butter

or Quick Apricot, Apple and Pecan Loaf Cake
6 oz (175 g) ready-to-eat apricots, each chopped in half
6 oz (175 g) cooking apple (1 medium apple), cut into ½ inch (1 cm) chunks with skins on
6 oz (175 g) pecan nuts
pinch salt
1½ level teaspoons baking powder
2 rounded teaspoons cinnamon
4 oz (110 g) plain flour
4 oz (110 g) wholewheat flour
4 oz (110 g) butter, at room temperature
6 oz (175 g) soft brown sugar
2 large eggs, beaten
3 tablespoons milk

For the topping:
4 cubes demerara sugar, roughly crushed
¼ level teaspoon ground cinnamon
Pre-heat the oven to gas mark 4, 350°F (180°C).

First of all when the oven has pre-heated, spread the nuts out on a baking sheet and toast them lightly for about 8 minutes, using a timer so that you don't forget them. After that remove them from the oven to a chopping board, let them cool a bit, then chop them roughly.

Meanwhile, take a large mixing bowl, sift the salt, baking powder, cinnamon and both flours into it, holding the sieve up high to give the flour a good airing and adding the bran from the sieve. Then simply add all the rest of the ingredients except the fruit and nuts. Take an electric hand whisk, begin to beat the mixture on a slow speed, then increase the speed to mix everything thoroughly before folding in the apricot, apples and pecans.

When it's all mixed add some more milk if necessary to give a mixture that drops easily off a spoon, then pile the mixture into the tin, level the top, sprinkle on the crushed sugar cubes and cinnamon, and bake in the centre of the oven for 1¼-1½ hours or until the cake feels springy in the centre.

After that remove it from the oven, let it cool for about 5 minutes in the tin, then turn it out on to a wire tray and let it get completely cold before transferring it to a tin. The storage tin may not be needed if there are people around, as this loaf tends to vanish very quickly. Cut into slices using a serrated knife
