why ever would you want to? Raw cashews are full of enzymes that are destroyed by cooking them. You can roast them in a pan, I suppose, but since the raw ones cost so much more than preroasted, I fail to see why you would. Even the raw ones have been exposed to some heat in the process of steam peeling the super hard outter shells. I adore raw cashews in their natural state-yummy in oatmeal

When you said raw, does that mean fresh from the tree? If not, the bought variety that comes from shops in natural form, I just put them in a dry frying pan, without oil, on medium fire to roast till slightly golden, sprinkling with a little salt (Optional). You have take care to stir them constantly &, watch out, they might jump out of the pan too.

I guess you place them on some grease paper on a baking tray and put them in the oven.
