Oven Baked Fried Chicken
Make three "dipping stations"
Season the chicken with all purpose seasoning.
Cover in first bowl which you have filled with flour & a little extra seasonings
Dip in second bowl which contains two eggs beaten.
Cover in third bowl which has bread crumbs in it!... Italian or whatevr style you like.
Simply place it on a cookie sheet in the oven at 350degrees truning after 15 minutes for a total cooking time of 24-30 minutes.
Serve with pasta and spaghetti sauce or
Rice and veggies or
mashed potatos and corn
the possibilities are endless!!!
Good Luck and Enjoy! ;-)

You can't go wrong with a good stir-fry! I like to marinate a chicken breast for a few hours or over night (like a teryaki marinade). Then slice it up into smaller strips and put the chicken AND the marinade into a flat-bottom wok or a deep pan with a little peanut oil turned on medium-high heat. Also cut up some of your favorite veggies (for instance I like carrot, green pepper, red pepper, and onion) and toss them in with the cooking chicken and just stir it all up, swirling it around over the heat. Put in a few ounces of water if you want a bit more "sauce" to develop. Serve it up over some steamed white rice, and tada!

pastas always quick and easy. Cook some up your favorite pasta (elbows, spaghetti, etc), pour in some of your favorite sauce (i then add a little sugar, parsley, garlic salt and parmesan cheese.)
Take a hot dog bun and open it all the way up and separate it. Butter it with margarine or spray with olive oil. Sprinkle a little parsley and garlic salt on the buttered sides, add parmesan cheese too if you like it. Bake at 350 until toasted.

Salads are always good ( you can add in anything you like) make it layered with meats (turkey, ham etc), cheeses (shredded), lettuce, and lots of veggies. Salads can be a light meal or a heavy one depending on what you add in. I also like to make a big salad and then take the left overs and toss together and stuff in a pita pocket with a little ranch.
