Taco Pie
INGREDIENTS
1 (8 ounce) package refrigerated crescent rolls
1 pound ground beef
1 (1 ounce) package taco seasoning mix
1 (16 ounce) container sour cream
8 ounces shredded Mexican-style cheese blend
1 (14.5 ounce) package crushed tortilla chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Lay crescent dough flat on the bottom of a square cake pan and bake according to package directions.
Meanwhile, brown the ground beef in a large skillet over medium high heat. Add the taco seasoning and stir together well. When dough is done, remove from oven and place meat mixture on top, then layer with sour cream and cheese, and then top off with the crushed nacho chips.
Return to oven and bake at 350 degrees F (175 degrees C) for 10 minutes, or until cheese has melted.

If you add some sour cream to the meatballs just before serving and warm it through, you'll have Swedish meatballs. Throw in some mushrooms too, either from a can or fresh ones sauteed in butter.
Otherwise, here's a recipe we like - not gourmet but very quick and satisfying:
TACO RICE
1 lb. ground beef
1 pkg. taco seasoning
1 cup shredded sharp cheddar
2-3 chopped tomatoes
1 cup sour cream
Hot cooked white rice
Brown and drain ground beef and flavor with taco seasoning per package directions. Serve over rice, topped with tomatoes, cheese and sour cream. Serves 4-6.

Ground Beef Stroganoff:
½ day 20 min prep
6-8 servings
2 lbs ground beef
2 medium onions, chopped
2 cloves garlic, minced
1 (4 ounce) can sliced mushrooms, drained
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup beef bouillon or consomme
3 tablespoons tomato paste
2 tablespoons flour
3/4 cup sour cream, mixed with the flour
1. Brown ground beef in large skillet; add onions, garlic and mushrooms.
2. Saute until onion is golden brown.
3. Put in Crock Pot with all remaining ingredients except sour cream and flour.
4. Stir thoroughly.
5. Cover and cook on low 6-8 hours (or on High 3 hours).
6. Stir in sour cream and flour 1 hour before serving.
7. Serve over hot buttered noodles or rice.

Meatballs And Shells Stew Recipe
1/2 lb ground beef
1/4 cup long grain rice uncooked
1 egg beaten
1/8 tsp ground black pepper
2 1/2 cups water
1 can tomatoes 14 1/2 oz whole, broken up!
1 envelope onion soup mix
1/2 tsp Italian seasonings
1/4 tsp dried thyme leaves
1/4 tsp garlic powder
1/2 cup small shell pasta
IN a medium bowl, combine ground beef, rice, egg, and black pepper. Shape into 1 inch balls and place ona baking sheet or wax paper. set aside
IN a medium saucepan, combine water, tomatoes, onion soup mix, Italian seasoning, thyme, and garlic powder. Bring to a boil. Carefully drop the meatballs into the boiling stew mixture and gently stir in pasta shells. Reduce heat to medium-low and cover and simmer for about 25 minutes till meatballs are cooked through and pasta is aldente!

1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 lb. ground beef
1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix
3/4 cup water
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1-1/2 cups KRAFT Shredded Cheddar Cheese, divided
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
PREHEAT oven to 400°F. Prepare Dinner as directed on package. While Macaroni is cooking, brown meat; drain. Add taco seasoning mix and water to meat; simmer 5 min.
STIR sour cream into prepared Dinner. Spoon half of the Dinner mixture into 8-inch square baking dish; top with layers of the meat mixture, 1 cup of the cheese and remaining Dinner mixture. Cover.
BAKE 15 min. Top with salsa and remaining 1/2 cup cheese. Bake, uncovered, an additional 5 min. or until cheese is melted.

Simple Tater Tot Casserole
1lb ground beef
1/4 cup chopped onions
salt pepper and garlic powder to taste
1 can cream of mushroom soup
1 1/2 cups shredded sharp cheddar
1 bag tater tots
Brown hamburger, season with salt pepper and garlic. Drain off fat. Add soup and wosterschier. Stir till blended. Pour into 13 x 9 casserole dish. Top with uncooked tater tots. Salt and pepper tots. Bake in the oven at temp suggested on tater tot bag until the tater tots are done. Sprinkle with cheese and bake untl cheese is bubbly.
This makes good leftovers as well. Taste pretty yummy with ketchup. Kids seem to enjoy it alot too.

Make Cheeseburg Set-ups
Take the ground beef and season it with all purpose seasoning or with Onion powder...whatever you have.
Make into burger paties and grill them on a foreman or make them on the stove.
When patties are almost all the way cooked put each between two slices of bread with cheese on each side. Grill the sandwich or bake it at 300 degrees for 5 minutes or until meat is fully cooked and cheese is melted.
You can eat as is or with a little ketchup on the side for dipping.
I just make mine with tomato soup and have a full meal.

Cheddar Beef Enchiladas
INGREDIENTS
* 1 pound ground beef
* 1 (1.25 ounce) package taco seasoning
* 1 cup water
* 2 cups cooked rice
* 1 (16 ounce) can refried beans
* 2 cups shredded Cheddar cheese, divided
* 10 (8 inch) flour tortillas
* 1 (16 ounce) jar salsa
* 1 (10.75 ounce) can condensed cream of chicken soup, undiluted
DIRECTIONS
1. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in rice. Cook and stir until liquid is evaporated. Spread about 2 tablespoons of refried beans, 1/4 cup beef mixture and 1 tablespoon cheese down the center of each tortilla; roll up. Place seam side down in two greased 13-in. x 9-in. x 2-in. baking dishes.
2. Combine salsa and soup; pour down the center of enchiladas. Sprinkle with remaining cheese. Bake one casserole, uncovered, at 350 degrees F for 20-25 minutes or until heated through and cheese is melted. Cover and freeze remaining casserole for up to 3 months.
To use frozen casserole: Thaw in the refrigerator overnight. Cover and bake at 350 degrees F for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through and cheese is melted.
