So next semester at school I get my own appartment (with roomates) I want to be able to cook easy and healthy meals. So tell me what is your favorite? And if you could please post the recipe that would be great especially if it's not a well known meal. If not that's okay i can look it up.

Salsa Chicken
So easy to make, its my boyfriends favorite of all the things I make and its by far the easiest

INGREDIENTS
4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream (optional)

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C)
Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve

Crockpot Chicken Stroganoff

Ingredients

(4 servings)

6 Boneless Chicken Breasts
16 oz Sour cream
1 cn Cream of Mushroom soup
1 pk Onion Soup mix, Lipton's


Instructions

Mix all together and put into crockpot. Cook on low for 4 -6 hours. Or until chicken is tender. Serve over cooked noodles or rice.

Chicken & Broccoli Alfredo
From: Campbell's Kitchen
Prep/Cook Time: 20 minutes
Serves: 4


Ingredients:

1/2 pkg. linguine (8 oz.)*
1 cup fresh OR frozen broccoli flowerets
2 tbsp. butter
1 lb. skinless, boneless chicken breasts, cut into cubes
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup
1/2 cup milk
1/2 cup grated Parmesan cheese
1/4 tsp. ground black pepper

Directions:

COOK linguine according to pkg. directions. Add broccoli for last 4 min. of cooking time. Drain.

HEAT butter in skillet. Cook chicken until browned, stirring often.

ADD soup, milk, cheese, black pepper and linguine mixture and heat through. Serve with additional Parmesan cheese.

I cook this alot and it is delicious!

I Love Big Salads!
Here are a few yummy ones to try:

Citrus Pasta Salad
1/4 cup mayonnaise or salad dressing
1 teaspoon grated orange peel
1 tablespoon orange juice
1/4 teaspoon salt
3/4 cup cooked medium pasta shells
2 large radishes, sliced
1 orange, peeled, seeded and sectioned
1 box frozen broccoli cuts, thawed and drained
1. Mix mayonnaise, orange peel, orange juice and salt in 2-quart bowl. Stir in remaining ingredients.
2. Cover and refrigerate at least 1 hour until chilled.

Grilled Chicken Caesar Salad:
6 boneless skinless chicken breast halves (1 1/2 pounds)
1/2 cup Caesar dressing
1 bunch romaine, torn into bite-size pieces (10 cups)
1 cup Caesar or garlic-flavored croutons
1/3 cup freshly grated Parmesan cheese
Freshly ground pepper
1. Heat coals or gas grill (or a foreman grill, if you are in an apartment!)
2. Cover and grill chicken 4 to 6 inches from medium heat 15 to 20 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut. Cut chicken diagonally into 1/2-inch slices.
3. Pour dressing into large salad bowl. Add romaine; toss to coat. Sprinkle with croutons, cheese and pepper; toss.
4. Divide salad among 6 serving plates. Top each serving with chicken.

I love mac & cheese with mixed veggies. I buy the mac & cheese with the creamy cheese sauce; when I put the pasta to boil, I also add some frozen veggies. Once the noodles and veggies are cooked, I drain the water and add the cheese sauce. It's not the healthiest, but it's a good way to make the veggies tastier. You can also substitute sliced hot dogs or broccoli florets for the veggies.

Cut boneless skinless chicken breast into bite size pieces, put in skillet on high heat with 1/4 terriyaki sauce, stir fry until chicken is well done (about 10 min), serve with rice.



Purchase ready made chicken strips at Walmart Deli or similar place, slice into strips, put into warmed 10" flour tortilla shells, top with lettuce, tomato, cheese, and Sweet Vidalia Onion Dressing, fold like a burrito, eat.

Pasta salad: tri-color pasta, broccoli, beans, green beans, chick peas, low fat salad dressing, etc... It's quick and easy and basically healthy.

Grilled chicken salad. You can use the already prepared white meat chicken and bagged salad, or you can grill your own and prepare it. It's kind of easy and healthy.

Anything with tofu. You can replace meat with tofu in many easy recipes like chilli, etc... It makes the meal more healthy. Ground turkey is also a healthy substitute.

EASY SPAGHETTI CASSEROLE

1 1/2 c Ground chuck
1 lg Onion, chopped
1 lg Green pepper, chopped
1/2 lb Fresh mushrooms, sliced
2 cl Garlic, minced
1 cn 35 oz Italian peeled tomatos
-coarsely chopped and juice
-reserved
1 cn 12 oz tomato sauce
1 t Basil
1 t Oregano
1 Bay leaf
3/4 ts Salt
1/4 ts Pepper
1 lb Spaghetti,linguine, or
-fettucine
2 c Shredded cheddar cheese
1 c Bread crumbs

1. In a 5-6 qt. dutch oven, cook the ground chuck,
onion, peppers, mushrooms, and garlic over medium-high
heat, stirring often to break up lumps of meat, until
beef loses its pink color (about 8 min.)

2. Add tomatoes with their juice, tomato sauce, basil,
oregano, bay leaf and salt and pepper. Bring to a
boil, reduce heat to medium-low and simmer, stirring
often, until slightly thickened about 20 min.

3. Meanwhile, in a large pot of lightly salted water,
cook spaghetti until just tender, about 9 minutes.
Drain well.

4. Preheat oven to 350F. Add spaghetti, and 1 cup of
cheese to the sauce; stir gently to mix. Transfer to a
lightly oiled very large baking dish. Sprinkle with
bread crumbs and remaining cheese on top.

5. Bake until top is lightly browned and casserole is
bubbling; about 30 minutes. Let stand 5 minutes before
serving.

NOTE: If you like black olives, you can add 1 small
can of sliced olives in step 4 to the sauce.

I just learned how to make lasagna. You brown the hamburger, put the hamburger down as the bottom layer in the pan your going to use, put speghetti sauce on top of that, layer your lasagna noodles (uncooked) next, then repeat with meat, sauce and cheese, and now another layer of noodles, and put the rest of your meat, sauce, and smoother with cheese, bake in oven at 350 for about an hour. cover the dish before you bake, the cheese will burn.
