Cucumber Salad

4 large cucumbers, thinly sliced
1 teaspoon salt
1 tablespoon ground black pepper 1 pinch garlic powder
1/2 cup mayonnaise

DIRECTIONS:
1. Place the cucumber slices into a large bowl. Season with salt, pepper and garlic powder. Stir

in mayonnaise until coated. Refrigerate for 20 minutes before serving.

I usually make mine with sour cream and just a hint of mayo (for flavor).

Peel and slice 2 large cucumbers and put them in a bowl. Peel and slice (thinly) one small sweet onion and add those to the cucumbers. Make a mixture of about a cup of sour cream and 2 T. of mayo. Add in 1/2 t. salt and 1/8 t. black pepper. Stir, pour over vegetables and stir well. Refrigerate well before serving.

Peel & slice cucumbers the thickness you like , I do mine thin & put in big bowl .
You can set in frig to drain in a colinder set in another bowle if you like , I don't cucumbers are very watery .
In another bowl put mayonase or sour cream , viniger & suger to taiste , mix to desolve suger . salt & peper if you like
Add this to cucumbers & mix good . set in frig a while so the cucumbers will be flavered.

Mom also put this over chopped lettuse

I like them diced best. Secret is you have to let it set in frig. for at least 30 min to get creamy! Tip: (salt draws moisture from the cucumbers(any vegetable actually) it gets/watery you should add the salt when served! That's a good idea with slaw etc. too )

CUCUMBER SALAD

3 or 4 cucumbers, diced
1 red onion, sliced in thin rings (cut rings in 1/2)
1 or 2 bell peppers, diced
* Pinch of salt
Dash of cracked pepper
Pinch of garlic powder
*1/2 tsp of fresh dill (only if you like dill )
3 tsp. sugar or 3 packets of Equal
3 or 4 Heaping tsp. Miracle Whip (or mayonnaise)

Mix well and let set. It takes a while for it to turn milky and set up.

Cut cucumber into squares sprinkle with small amount of salt and put into a bowl to rest. Mix mayonnaise and leave to settle in a separate bowl. Cut and chop some fresh mint and add this to the mayonnaise. When ready to serve drain the cucumber of moisture then mix with the mayo and serve. Do not mix in the cucumber too early otherwise the moisture that comes out of it can cause the mayo to separate.

Slice the cucumber into bit sized pieces. Mix with mayonnaise and sugar to taste. Yummy!!

This is the best sauce ever. Real mayo, milk, and sugar. Milk thins the mayo and sugar to taste. You can do this with cold salad also. Ever tried broccoli, bacon, red onion, cauliflower, parmesan cheese with this sauce. If not, you should. I don't measure just toss it all in. Mix mayo, milk, and sugar. Then pour on top and toss. YUMMM

Slice your cucumber very thinly [peel the skin if it didn't come in plastic] and put in a colander with salt. Let the cucumber drain for 2 hours, then rinse well. Add mayonnaise, freshly ground black pepper and some freshly chopped dill.

chop cucumber into small bits, add sea salt and fresh ground black pepper to taste, and mix into the mayo. Add some finely copped spring onion and red pepper to taste if you want to rev it up a bit.

I use sour cream, thinly slice cuqs ,chopped red onion, parsley dill , mix w/ s & p, a little sugar , lemon juice and white wine vinegar. You could sub mayo but ut will be a little thicker. For even lighter version use nonfat yogurt or sour cream and artificial sweetner.
