It sounds to me that you are baking it at too high a temperature, this is because it is still rising round the edges so it cant be because the mixture is too heavy, try turning the heat down a little and bake it for longer

Like all cakes, if it is not cooked perfectly, it will collapse, perhaps you've checked it once too often, opening the oven door lets cold air in and that affects the temperature inside the oven which in turn affects the cooking of the cake.

I would guess, that you open your oven while its baking to check on it from time to time, this lets all the hot air escape and allows cold air in, which dramatically affects the cake. Also id say you might not have the flour/soda ratio right, could be that not enough oxygen is being produced inside the cake while its rising.

This has happened because your oven is too hot. The outside of the cake is cooked the inside is not and so it sinks.
Lower the oven temp by 5-10 degrees and put a few more minutes on the cooking time.
