i know to cook noodles ,but i dont know how to prepare noodles i mean the raw materials in need to prepare noodles.does any one knows mean please teach me i like it very much.
i have a machine through which i can prepare it with out using
hands used in chinese method.
so i am in need to know of only the raw materials with correct ratio.

Swabian Noodles
2½ C. sifted all-purpose flour
½ tsp.
salt
2
eggs, beaten
½ C. water

Combine flour and
salt in mixing bowl, make a well in the center, add
eggs and 1/4 C. water, beat until a stiff dough forms,
adding a little more water at a time until you get the
right consistancy- thick, firm, coming away easily from
the bowl. Knead until smooth. Let stand in bowl 30
minutes. Dampen pastry board with water, place dough on
it, flour the rolling pin slightly and roll out to
1/8th inch thickness or a little thinner. Heat a kettle
of salted water to boiling. With a sharp knife, cut
off very thin slivers of the dough (or use a
Spätzlepresse), transfer to a plate as it is cut, and push
directly into rapidly boiling water. Do not crowd kettle.
Spätzle will rise to surface when cooked, in about 5
minutes. Remove from water with slotted spoon, drain in
colander. Add more slivers of dough to the boiling water
until all is cooked.


HUNGARIAN NOODLES Gyurt teszta
1-¾ cups flour 1-teaspoon salt
2 beaten eggs 2 tablespoons lukewarm water
Place flour and salt in bowl, make a well in center. Put eggs and water into well and work into smooth dough. Work for 10 minutes with heel of the hand turning constantly. Dough must be very smooth. Cover with bowl and let rest for 20 minutes. Roll out from center to edges until it is about 7 inches in diameter. Then begin rolling from one edge until all dough is on rolling pin. Deep dough well floured so it will not stick together. Roll in this manner, turning dough frequently, until very thin. Lay dough flat and let dry 15 minutes, turn over and dry 10 minutes. Cut into strips 2 inches wide, and flour. Stack 4 or 5 strips and cut thin or broad noodles as desired with a very sharp knife. Toss lightly on board and let dry. Can be used immediately. To store, dry at least for 2 days.

2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
3 eggs

Mix all ingredients with fork in large bowl. Add more liquid or flour as needed to make dough stiff and workable. Place on floured board and knead until smooth. Divide into 3 portions and roll each one thin. Sprinkle each sheet lightly with flour. Cut into strips or feed into pasta machine. Let dough dry slightly before cooking.

To cook, add pasta to boiling, salted water. Cook 7 minutes. Drain.

You can also make noodles without eggs.

1 pound all-purpose flour
1 tablespoon cornstarch
1/2 teaspoon salt
1/2 teaspoon baking soda
about 3/4 cup water (or part of it could be chicken stock if you want to flavor your noodles)
additional flour for rolling dough

Mix your dry ingredients briefly. Add water gradually, mixing with a fork. When it gets too difficult to use the fork, start using your hands! The dough should be supple and stretchable. It shouldn’t stick to your hands when kneaded well. Divide the dough into 8 equal pieces. Keeping the other pieces covered, roll a piece of dough either on a well-floured countertop or using a pasta machine. You want it about 1/16-inch thick. You could of course roll it thicker, as long as you remember that it will cook longer.

You can cook the pasta right after you cut it. It will take about 2-3 minutes cooking time in a briskly boiling pot of salted water. Or you can let it dry — hang the cut pasta over a wooden rod, or the back of a chair, or toss them with just the teeniest bit more flour and pile them in neat circles on your countertop — until you are ready to cook.

INGREDIENTS
1 cup all-purpose flour
1 egg
1 pinch salt
DIRECTIONS
Mix all ingredients. Roll thin with flour, then roll like a jelly roll. Cut into 1/2 inch strips. Let dry.
Drop into hot chicken broth. Boil for 15 minutes.
