Raspberry meringue bomb
250g frozen raspberries
2 Tbsp Creme De cassis
280 ml double cream
125g Ready made meringues
Start by defrosting the berries then push them through a sieve using a wooden spoon, add the cassis to the juice.
In another bowl, whisk the cream till just thickening.
In a third bowl, Crumble the meringues into chunky pieces to look like rubble not dust.
pour the cream into the meringues and mix well.
gently pour half the couli into the mixture and fold (figure 8) to get a marbled effect.
pour the finished bomb in to a suitable pudding bowl and put in the freezer for three hours. Put the remaining coulis in the fridge.
When ready to serve place the pudding bowl in warm water for 30 seconds and turn upside-down on a plate. you can now cut and serve then adding the rest of the couli or pour the couli all over the to (to look like a red nose ) before cutting and serving.

Red peppers stuffed with rice - yum yum x
Ingredients:
150ml/5fl.oz. Olive Oil
4 Onions, finely chopped
2 tbsp Pine Nuts (optional)
50g/2oz Long Grain Rice
2 Tomatoes, 1 finely chopped
Salt
1 teasp Sugar
180ml/6fl.oz. Boiling Water
1 heaped tbsp Sultanas
8 sweet red peppers
1 heaped tbsp Freshly chopped Parsley
Ground black pepper
1/2 teasp Allspice
1tbsp Lemon Juice
Boiling Water
Instructions:
1. Heat the oil in a medium saucepan, add the onions and nuts, mix well then reduce the heat, cover and cook for about 5 minutes or until the onions are softened, stirring occasionally.
2. Remove the lid, raise the heat a little and stir for a few minutes until the nuts brown.
3. Add the rice and the finely chopped tomato and mix well. to the pan and stir a couple of times to coat the rice.
4. Add the salt, sugar, boiling water, and sultanas, mix well, reduce the heat to low and cook for 10 minutes, stirring from time to time.
5. Meanwhile, cut the remaining tomato into quarters then thinly slice and set aside.
6. Cut out the stalks from the peppers, remove the seeds and sprinkle the insides with a little salt.
7. Add the parsley, black pepper, allspice and the lemon juice to the rice mixture, stir and continue to simmer for a further 10 minutes.
8. Fill the prepared peppers with the rice mixture, arrange the sliced tomatoes over the top of each then place upright in a large saucepan.
9. Gently pour in enough boiling water to come about 7.5cm/3-inches up the sides of the peppers, cover the pan with a lid and cook over a low heat for 30 minutes.
10. Carefully pour off the water and allow the peppers to cool before serving.

How about strawberry smoothies - easy and quick and you can add lots of different fruits? Otherwise you could do a healthy pizza - make the base yourself so you know it's as healthy as can be and add tomatoes, red peppers and red onions, along with the tomato paste base.

Try a tomato soup cake, it's red and simple to make. The recipe can be found on recipezaar. My daughter made this for her school bring and buy, and had to give out more than thirty recipes as it was so popular.

OK my grandma used to do this for us cut a red apple in skinny wedges now use a bid circle cookie cutter and cut some bread into a circle with it cover with peanut butter use the apple wedges as ears grapes are eyes cherries are a nose cow mien noodles for hair and carrot for a moth and have a smile sandwich

Hi there! Well i used to love red nose day at school i use to go crazy with my ketchup or beetroot sandwiches.
However, u could put sun-dried tomatoes and red peppers in a sandwich with bacon or something like that and for fruit they could have red apple.

if you want to do something different take boiled eggs (peeled) cover with red food coloring till you get the color you want .... then devil them and color the filling too....I've done a version of these for Halloween and everyone thought they were a great idea...If you want something more traditional strawberry(or any red fruit)parfaits are great...but if neither of these appeal to you think of your kids favorite red foods(tomatoes,watermelon,whatever....)and look it up on www.foodnetwork.com or www.parents.com Good luck

Well stuffed tomatos is a favourite in my house, healthy red and you can stuff them with whatever you want. Cheese and bacon is a favourite, but since it's suppose to be healthy anything can be an option.
