Ok, I'm gonna weigh in here.
I believe what you are referring to is what is termed "micro" evolution, much of which is not really in dispute. Microevolution does not prove "macro" evolution which is where the real dispute is, that life evolved from anti matter (nothing) and humans have resulted from various stages of species change from ameoba(sp?) to monkey and finally human. One huge problem evolution has is that none of this is "observed" as it is supposed to be to be considered scientific fact or certainty. Evolution as an answer to where human beings and the rest of life, planets, the universe, etc, come from is woefully lacking "observation". It does in fact require a very large amount of "faith" to believe, making it every bit as much a belief system as religion is. In fact, "observation" will tell you that the physical realm left to itself tends towards greater chaos rather than greater order and progress. Consequently, the perfect order of the universe could not have been created out of nothing or even a massive explosion. Intelligence does not create itself since the absence of intelligence would make this a virtual impossibility. The only explanation for the order of the universe and living things is "intelligent design" which of course would be God.
As far as I know, Evolution is still called the "Theory" of Evolution, and that is a long way from being a "fact".

Ignorance mostly, either willfull or not. Hell, I've have a biologists who is very knowledgable with many of the aspects of evolution speak to me on the matter and I barely understand all the mechanics. Imagine someone whose belief structure is predicated on an idea that evolutionary theory directly contradicts. It certainly hits literalists the hardest, but I don't think that people who are religious but accept evolution(with the exception of buddhism and other faiths, of which evolution does not contradict their religious beliefs) by saying "my god did it" are equally as ignorant.

I forgot where but i did read on the internet that the question of evolution is something that was naver really proved but is generally accepted because, honestly, who is going to believe that everything was just created in a mere six days BY SOMEONE WHO"S EXISTENCE IS TOTALL DOUBTFUL TO MANY! And back to the first part of your question, the Bible tells us that God did create all that exists in the space of 6 days. So if you believe it means you have faith in that information and that simply means believing in something you have never seen. You just don't doubt it. Thats just how it is.

The scientific theory of evolution which explains facts has little to do with religion. The real issue is applying scientific method to revelation.
In your details, you are not talking about evolution but changes with other explanations. For example, our height is a function of diet.
Religious groups believe in revelation. They see evolution contradicting revelation, and for them, there is only one belief system revelation. Not two, science and revelation.

I think this is called adaptation and progress, of course we have changed the way we live with technological progress, yes we have changed the way we think because of new proven and sadly unproven 'discoveries', but here's the thing we were humans, we are still humans, we will always be humans.

I think you are thinking in a broader sense of the definition of evolution. I don't think most people would argue that we evolve and grow in one way or another, but coming from monkies is another thing.
