Beer Batter for Fish, Shrimp and Onion Rings
Ingredients:
5/6 cup all-purpose flour
1-1/4 tsp. salt
5/8 tsp. baking powder
5/8 cup beer
1-1/4 egg
1-1/4 tbsp. vegetable oil
Directions:
Whisk flour, salt and baking powder in a mixing bowl. Separately, whisk beer, egg, and oil. Gradually add the wet mixture to the dry mixture, stirring until there are no lumps. Dip foods into batter and fry in hot oil (350°F) until it is golden and crispy. Drain foods on paper toweling or a brown bag. Serve hot.

Beer Batter Fish Fillets
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon dried dill weed
3/4 cup beer
1/2 cup milk
2 eggs
1 1/2 to 2 pounds firm white fish fillets
Vegetable oil for deep frying
1. In a large bowl, mix together flour, salt, baking powder and dill. Add beer, milk, and eggs, mixing well.
2. Place fish fillets in batter mixture, coat well, and let stand for 15 minutes.
3. Heat deep fryer to 375*F (190*C). Place fish in hot oil, and fry until golden brown. Cook fish in batches to maintain oil temperature. Serve.
Makes 6 servings.

Try the following
salt and freshly ground black pepper
225g/8oz self-raising flour, sieved, plus extra for dusting
300ml/½ pint lager
To make the batter, place the sieved flour into a large bowl. Whisk in three-quarters of the lager. At this point, the batter should be thick, almost too thick. It if appears to be over-gluey, whisk in a little more lager to loosen slightly. Season with a pinch of salt.

Similar to Yorkshire pudding and pancakes.
4oz plain flour
1 lrg egg
teacup milk.
pinch salt
pepper.
Add s and p to flour.
Add beaten egg and mix
SLOWLY add the milk until the mix is like a soft paste, not runny.
Dip fish in flour then dip it into batter. Cook straight away.
For fish batter you need it to be quite thick so it's important not to add all the milk at once. you may not need it all.

Batter for coating fish, meat, poultry and vegetables.
1/4 lb plain or self raising flour (4 oz or 4 heaped Tbs)
1/4 level tsp salt
1 medium egg
1 Tbs melted butter or oil
1/2 cup milk
Sift flour and salt into a bowl (you want it light and fluffy).
Beat to smooth creamy batter with unbeaten egg, butter and milk.
Coat fish and deep fry.
* You scan ubstitute milk with water, sparkling water or beer. Experiment, you'll get surprising results.
* You can substituge egg with 2 egg whites. Whisk them to stiff snow peaks for even lighter resutls.
* Spice up the batter with pepper, mustard, or curry powder.

Mix flour and beer to a paste, let it stand for at least 3 days, then completely immerse the fish fillets before puting in the fat or oil to deep fry. The temperature of the fat or oil is critical. I don't know what it is but I think it's about 160 degrees C

Simple pancake batter is fine (Flour, 2x eggs and milk) but I like to add a bit of vinegar and good dash of beer - real ales such as Abbot Ale or Old Speckled Hen are best. Make it the night before and allow it to sit in the fridge overnight for the best results!

BATTER FOR FRYING FISH
1 c. self-rising flour
4 tbsp. cold water or more, if needed
2 tsp. salt
4 tbsp. salt
2 egg whites and 2 egg yolks
1 or more lbs. filleted fish
Soak fish for 25 minutes in salted water. Whisk 2 egg yolks and stir in flour, cold water, salt and oil. Mix all together. Beat 2 egg whites until stiff, fold into flour mixture. First dip fish into flour, then into batter, then into flour again and into batter again. Fry in oil until golden brown.

there are all kinds of batters the easiest is to use a corn meal or flour with milk next is beer and flour or corn meal you could just bread it in corn meal and cook in olive oil or butter or veggie oil, the possiblities are near endless try white wine with cayenne, flour and just a dash of salt, maybe even a little dill just think of the 3 things most add to a fish dish to bring out its flavor or accent it, sour (lemon, dill, lime or even sour cream), spice (cayenne, cajun flavoring, peppers or some other none to mid burn spice) and after taste (wine, corn meal, light flour maybe even sweet potatoe) mix and match these to your favorites you can't go to wrong don't be afraid to experiment a little the worst that happens is you don't like it (just experiment with cheap fish first) or easy to catch like croppie, trout, or many other kinds.
