In South Australia there is the Barossa Valley which is the largest wine region in OZ, Jacob's Creek is there. In NSW, there's the Hunter Valley, which is a bit smaller but has some nice little places. I spent a day visiting each and tried some excellent wines. You simply roll up to the cellar door and they will go through a tasting for you for free. Generally, you try four or five different types of wine.

I live near the Hunter Valley (NSW) and there are many wineries and sampling is free. You can try as much as you like, but just keep in mind how much you drink if you are driving. Another option is take a tour and that way you can drink as much you like!!

Yarra Valley have a lot of wine tastings - they cost nothing or next to nothing (like $2 or $5)
Sometimes wine cellars will have free tastings weekly, and i know some wine places now have free tastings of particular wines.

At the wineries - and there are many in each State. Go on a tour to a wine district and sample as many wines as you like.
