The Sabbath that Jesus lived by was from sunset on Friday until Sunset on Saturday. The Corporate Christians couldn't put up with that.... Seriously, Sunday was the worship day of Mithra, Ra, and several other Gods. The Christians probably would use the habits of the congregation to go to services on Sunday to bolster their congregation. Had they used the traditional sabbath of the Hebrews, most of their Romans would not have showed up. If I remember correctly the Coptic Christians still follow the Hebrew Sabbath.

Because Jesus was a Jew and the law of Sabbath was for the Jews. Read Paul's writings

Keeping the Sabbath as in the Old Law or Covenant was completed by the blood of the New Covenant (in Christ's blood). He reiterated everything in the ten commandments except the sabbath if you look at what He said. The sabbath gives God the last day of the week, Christians give God the first day of the week because the Law was based on works - they worked up to their rest day. Christ has now come and we start in the rest of His completed work on Calvary, that being His Resurrection. He resurrected on the first day of the week and we begin our week in that "rest" that is based in Grace and not "works."
