As someone who just got married within the last year, I definitely think you should get someone to cater it for you. Before you make your final decision, keep in mind that if you make it ahead of time you will need a fridge to store it in, and someplace big enough to heat up all that food. While you can make the food ahead of time, there is simply no way you will be able to cook/reheat the food on the big day yourself. Do you want to look back at your wedding and the only thing you remember is hanging out in a kitchen? Remember that your guests are there to celebrate with you. If a friend is willing to help, they will probably miss your wedding ceremony.
If you still insist upon doing it yourself, I would suggest lasagna. You can buy the no-boil noodles, and pre-made marinara sauce to save time. It also is easy to make a vegetarian option in case some of your guests would prefer that. Serve with a simple salad and garlic bread or rolls, and you are set. Check out a store like Smart and Final (www.smartandfinal.com) for supplies like disposable foil pans and lids, buffet warmers, serving utensils and such.

Sandwiches. You can get about 10-12 sandwiches out of a loaf of bread. Make your fillings ahead of time, but don't make the sandwiches until the day before or the morning of the wedding. Choose both white and wheat and cut the crusts off the bread. Cut all the crusts off the bread, throw the crusts outside for the birds, and put the cut bread back into the sack so it won't dry off. Once you're done, you can start filling them. Spread the filling on the bread thin, these are finger sandwiches, not hoagies. I cut the sandwiches in half on the diagonal. It's prettier than in half vertically. I also put them in a large catering pan, put SLIGHTLY moistened paper towels on top of them, cover with aluminum foil and refrigerate. They'll stay fine.

Use small tuna fish sized cans, leftover ham, or one of the larger cooked, canned hams
Mayonnaise
Mustard
Sweet pickle relish
Salt, if you desire
Chop up the ham real fine. I use a mini-food processor. Put it in a large bowl with the relish and mayonnaise and stir real well. Put in enough mayonnaise so the mixture isn't dry. Then put in a small amount of mustard, a tablespoon or so, depending on how much ham you're using. 3 of the small cans will make up 20 or so sandwiches. Make half wheat and half white, as you should on all of them.

Chopped pickles
1 sm can chopped olives
Salt, if you desire

1 4-cup pkg shredded cheese (or shred your own)

you can do it ! you need someone to help you serve the food - at least 3 people, I think.
For 80 people a good meat dish could be the following:
- English style roast beef: you cook it in advance and then slice it before serving it. It can be served warm or cold
- meat kebabs, in which you can alternate small cubes of meat with chunks of pepper or onion or squash
- meat balls which you can also serve as kebabs - think about satay or middle eastern style.
- Chicken yakitori (chicken alternated with leek or shallot)
- you can also prepare some vegetarian kebabs in case there's someone who wants to go vegetarian
- English style pork / beef pie
- meat loaf

arm roasts are good made with beer ,onions,garlic,italian seasonings,green peppers little bit of vinigar salt pepper put in crock pot let it go all day then shred it up leave in its juices searve on rolls like small italian rolls ,or make ribs with bbq for 80 people think about 1 lb per person to have enough or just have lunchmeat and cheese trays, then some salads potatoes and veggies
