Green bean casserole
Mashed potatoes with spinach puree
Rolled cabbage -- fill it with spinach for extra greeniness!
Green peas and carrots
Anything with snow peas
Cucumbers shaped into shamrocks
Goya/Chinese bitter cucumbers (acquired taste warning!)
Pineapple in lime jello with marshmallows (yeah, I know you said no gelatin, but this is a CLASSIC! And I'm giving you a bunch of alternatives, so let me say this one!)
Pistachio pudding filled with pineapple, cherries, whipped cream, etc.
Chicken fingers breaded with pistachios are kind of green.
Green boiled/devilled eggs (soak the peeled or cracked eggs in a little water/vinegar/food coloring. You should see the proportions for Easter egg dyeing on the food coloring box; use those).
Handrolled sushi with cukes in the middle, and use particulary greenish nori for the wrapper.
Add a little food coloring to crepes, and wrap up mint-flavored, green tinted whipped cream. Or Cream cheese and ham for something savoury.

Broccoli caserole made with broccoli on the bottom of a caserole dish, then mix container of sour cream and cream of chicken soup and spread over the broccoli and then use a boxed dressing the newest flavored one is good. Just use the butter and seasoning and mix into crumbs, not the water. Put this on the top of the caserole and bake on 300 until golden. The broccoli needs to be partially cooked or frozen and thawed before making. This can be made ahead of time an reheated in microwave or oven. It is better this way.

The most common is boiled cabbage as in corned beef and cabbage.
If you are looking for easy, almost any green vegetable will do.
Broccolli, green beans, green peas, Artichokes,Spinach, Collards, Asparagus.
I would suggest Green bean casserole. The one everyone has at Thanksgiving and Christmas.
or Spinach quiche.

NGREDIENTS
* 3 avocados, peeled and pitted
* 3 green tomatoes
* 4 fresh tomatillos, husks removed
* 3 cloves garlic, peeled
* 2 jalapeno peppers, seeded and halved
* 5 sprigs fresh cilantro
* 1 1/2 cups sour cream
* salt to taste
DIRECTIONS
1. Place tomatoes, tomatillos, garlic, and jalapenos in a saucepan, and add enough water to cover. Bring to a boil, and cook for 15 minutes, or until vegetables are tender. Remove from heat, drain, and allow to cool.
2. Place avocados, the cooked vegetables, sour cream, and cilantro in a blender or food processor, and blend until smooth. Season to taste with salt. Cover, and refrigerate until ready to serve.
