I know they are tough to make but I can cook quite well. I'm sure the right cookware will help. I want to make dessert crepes, filled with ice cream, topped with chocolate and bananas. Or with whipped cream and strawberries/peaches.

Thanks!
David

Crepes are all about technique and equipment.
Get a good commercial quality 8" non stick saute`pan and use it for omelette's and crepes only.
The secret to a good crepe is getting the pan up to temp
Using a thin enough batter so that completely and quicklly covers the bottom of the pan in a very thin layer
In one continous rotational wrist motion ,swirl the batter in a clockwise direction .
use a measured ladle to portion it out properly. If the portion is too large switch to a smaller ladle . In short order what will happen is that you will get the viscosity ,the portion size , the temp and the technique right . You may spend ten bucks or so on ingredients until you figure it out but that's money well spent.
One more thing ,all crepes have two different sides be aware of the presentation side when you serve them
