Mine are fairly simple. Just chicken, celery and leaks or onions if that's all I have. Just barely enough mayo to hold it together. If I'm out of celery, I've made a pretty good one with celery seed. Mmmmm, it 's making me hungry!

Chopped celery, chopped pecans or walnuts, and - sometimes - a few halved grapes. As for the basic recipe, I just use leftover chicken, minced, mixed with mayonnaise, dried onion and garlic powder.

I assume you mean chicken salad sandwiches?

Sometimes I add mayo, lemon juice, toasted pecans, celery, and a little dry mustard.

Other times, I add mayo, celery, honey, curry powder, walnuts.

I like to mix the chicken and mayo with apples, grapes, onions and curry powder. I know it sounds strange to use apples and grapes, but it tastes really good.

bread the chicken, put tomato sauce and cheese on top. Perhaps with grilled sweet peppers, onions and mushrooms. Put it on an italian roll. Bingo, one chicken panini.

use bite size pieces of left over chicken ,heat in pan w/left over chicken gravy to the consistency of chicken salad. scoop onto favorite warmed roll. fast and good.
