Salad:
greens (your choice)
one apple cut and cut into cubes (about 1/2 inch), remember to add lemmon juice to them to keep them from becoming brown
1 pkg cran raisins
1 cup chopped almonds or sliced
onion
tomatoe
buy rasberry vinagrette and serve
main course:
Cook some boneless, skinless chicken breasts (4 or 5):
Salt and pepper both sides of the chicken then place on a cookie sheet and bake for half an hour, cut one to check and make sure it is cooked if not, put in the oven a little longer, say about 5 mins and check again.
Side dish of pasta:
1 lb of spaghetti
1 large bunch of fresh parsley
1 cup fresh basil
4 cloves of garlic
6 tbs grated parmesan
1/2 tsp salt
2 tbs olive oil
1 medium onion
1 can of tomatoes, drained
1 tbs brown sugar
cook the pasta according to directions until al dente. drain and rinse. pour the pasta back into the sauce pan and relpace the lid to keep warm. in a blender or food processor combine the parsley, basil. garlic parmesan, salt, and 1 tbs of the oil. process to a smooth paste. heat the remaining oil in a medium frying pan. add the onion and cook. stir occasionall for about 7 mins or until soft. add the tomatoes and cook for about 5 minuts. reduce the heat and season add ing the brown sugar and cook for about 5 mins. remove from the heat and stir in the herb mixture. toss the pasta with the sauce and serve with one or two chicken breast on top.
take a loaf of italian bread and cut off 1 inch thick slices. Toast them and then rub with a peeled garlic clove and brush with olive oil for garlic bread.
For dessert:
7 1/2 ounces bittersweet chocolate, coarsely chopped
11 tablespoons unsalted butter, cut in large pieces
3 large eggs
3 large egg yolks
1/4 cup plus 2 tablespoons white granulated sugar
5 tablespoons all-purpose flour, sifted
Preheat the oven to 325 degrees.
Butter and flour six 6-ounce custard cups.
Place 5 1/2 ounces of the chocolate and the butter in a metal bowl, and set it over a pan of simmering water. Stir until melted and smooth. Cool slightly.
Using a standard electric mixer with the whisk attachment, beat the eggs, yolks and sugar at medium-high speed until they are pale and thick, about 10 minutes.
Reduce the speed, and gradually mix in the flour.
Add the chocolate mixture to the flour mixture, and continue to beat until thick and glossy, about 5 minutes.
Divide half of the mixture among the prepared custard cups. Divide the remaining 2 ounces of coarsely chopped chocolate among them, placing the chunks in the very center of the chocolate mixture (there should be about 1 tablespoon of chopped chocolate per custard cup). Then top with the rest of the chocolate batter.
Bake until the cake is set around the edges but the center jiggles slightly when the cup is moved, about 12 minutes. Cool slightly (no more than 5 minutes).
Run a sharp knife around the edges of the cups. Turn the cakes out onto plates, and serve.
This is a complete meal that I served for my boyfriend when I first moved into my new apartment. He loved it!

Use chicken pieces of your choice,
dip into beaten egg, then dip into dry mashed potato FLAKES, buds won't work {you can add to flakes: salt & pepper, a dry package of ranch dip mix, paprika, parsley, seasoned salt, garlic powder, etc} then place on an oiled cookie sheet & bake for about 1 hour.
You can also get a good crispy coating if you use PANKO instead of the tater flakes. It's in the aisle with the Asian food and is in a box...you should also look at the shake & bake aisle if you can't find it.
Anyway, chicken cooked this way is just as crispy as fried chicken without the fat & mess and you can cut up large wedges of potato and bake them at the same time as the chicken.

This one is so easy, and yet it is SOOO good! Every time I cook it everyone is amazed and asks for the recipe, and thinks I'm a super gourmet chef!
Tomato Basil Chicken
4 (6 ounce) boneless, skinless chicken breasts
1/2 (12 ounce) bottle garlic and herb marinade
16 fresh basil leaves
1 large tomato, thinly sliced
4 slices provolone cheese
12 slices bacon
1/4 cup freshly grated Parmesan
DIRECTIONS
Place chicken breasts on a cutting board. With a sharp knife, slice chicken breasts horizontally, without slicing them completely in half. Open the chicken breasts like a book. Place chicken and marinade into a large resealable plastic bag. Refrigerate for 30 minutes.
Preheat oven to 500 degrees F (260 degrees C).
Place opened chicken breasts on a broiler pan. Place 4 basil leaves on the bottom half of each chicken breast. Top each with 2 or 3 tomato slices and 1 slice of cheese, and fold over top half of chicken (if necessary, fasten with toothpicks). Wrap 3 slices bacon around each chicken breast.
Cook in preheated oven for 15 minutes. Turn chicken, and cook 15 minutes more. Remove from oven, and sprinkle chicken with Parmesan. Return to oven, and cook until cheese is melted, about 2 to 3 minutes.

very easy and tasty: ecstasy cake
bake 1 dark chocolate or devils food cake according to package directions in a 9x13 pan. cool . leave cake in pan. take a straw and poke (this is the hardest part) holes about every 1 1/2 to 2 inches apart. take 1 can sweetened condensed milk and slowly pour into holes. then take 10 ounces caramel topping and do the same. top with cool whip. eat

hm if you want to make something easy i would recommend pasta. or perhaps even chicken parm... thats fairly easy... however... i recommend going to www.foodnetwork.com and looking for recipes on that site... the recipe range from easy to hard and several of them can be done within 30 minutes. I use that website all the time and it is my life when I am cooking. hope this helps!

You should try something really easy like chicken breast...just season them and spray a pan with non stick spray brown chicken on both sides then add a little water and cook for about 30 mins on low to med heat...then just cook a couple of sides like green beans with butter and salt and pepper, bake a potatoe in the microwave (rinse it poke holes in it with fork just for like seven minutes) or make mac and cheese guys love it and it's good with chicken....
You could cut the chicken up in nuggets dip raw egg then in flour that you've seasoned and fry in greese with fries and mac and cheese.

Cheesy Potatoes

1 bag frozen Shredded hash brown potatoes
2 cans condensed Cream of Mushroom soup(or one family sized can)
Velveta cheese
* spread the hashbrowns evenly in the bottom of a baking dish
*Chunk up desired amount ofvelveta cheese
*pour canned soup over top ((DO NOT ADD WATER))
**If desired top with bread crumbs or crushed potato chips
Bake at 350 degrees for 20-30 minutes

2 (or more) Boneless skinless chicken breasts
1 bottle lemon pepper merinade
1/2 cup bread crumbs
*Merinade thawed chicken breasts for 30 minutes
*Roll chicken breasts in bread crumbs and place on a greased baking sheet
*Drizzle remaining merinade over breasts
**bake at 350 30-45 minutes until chicken is no longer pink inside

2 C Heavy Whipping cream (In place of milk)

shake n bake
pasta sauce
shredded mozzarella cheese
coat the chicken with shake n bake, cook chicken(will give directions on shake n bake box)
put tablespoon of pasta sauce on each piece of chicken then top with cheese.....put back in oven just long enough for cheese to melt......
serve with pasta, salad or rice
