None, it was the Muslin's who started it all. The Middle East was a christian geographical area under the influence of Rome. The Muslim's after Mohammad died started the wars that lead to a defencive crusade.

It's impossible to say. We know the native Americans and many and countless other aboriginal peoples, but how many european cultures did they make convert? What with lack of written language and book burnings and such like that, I doubt we can ever know.
