Scallops are delicious all by themselves. Try sea scallops first. They are the big ones at the market and have a better, lighter flavor than bay scallops. Dry 6-8 scallops with a paper towel. In a small pan heat one tablespoon butter and one tablespoon olive oil over medium high heat. Lightly dust scallops in seasoned flour (salt & pepper). Place scallops in heated pan. Sear about three minutes or until lightly golden. Turn scallops and brown the other side. Continue browning until scallops are opaque white. Remove to plate. Enjoy!

Actually, how you cook them is MUCH less important than what kind you get. "Dry Pack" scallops, more expensive than other scallops, are decidedly NON FISHY and not mushy, therefore, they are the ones restaurants use. People who enjoy scallops in restaurants and try to prepare them on their own are generally disappointed. It's not their culinary skills that's holding them back--it's the scallops! So...first, ask for "dry pack" and expect to pay $12 to $15/lb depending upon where you are in the country. Then, you can heat a bit of olive oil and butter in a pan w/ a bit of white wine and the herb of your choice. Toss the scallops in and watch them carefully. When they're translucent, they're done. There are plenty of really intensely flavored recipes for scallops too. But, as far as I'm concerned, don't spend the money on these tasty things if you're going to cover the taste up. Bon Appetit!
