I have a big ole' bag of butterscotch chips and need ideas for what to do with them. Ideas with recipes are more than welcomed.

These Are SO Yummy !

Butterscotch Cheesecake Bars
1-12oz.bag butterscotch Chips 2 c.
1/2 c margarine
2 c.Grahm cracker crumbs
1c.chopped Nuts
In med. pan -melt chips,margarine add nuts &crumbs
-press 1/2 mixture into greased13 " cake pan
in bowl put -1 8oz. cream cheese
1 14 oz can of Eagle brand
1 tsp vannilla & 1 Egg - beat till blended -
Pour on your cake pan of crumbs - top w/remaining crumbs
bake 25-30 min.in 350% oven Let stand - Chill before serving

Peanut Butter Haystacks

INGREDIENTS
1 cup butterscotch chips
1/2 cup peanut butter
1/2 cup salted peanuts
2 cups chow mein noodles
DIRECTIONS
Melt butterscotch chips and peanut butter on top of a double boiler, or in a microwave. Blend together.
Stir peanuts and noodles gently into the melted peanut butter mixture.
Drop dough by forkfuls onto waxed paper. Cool until set.

Oatmeal Scotchies

1 1/4 Cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
3 cups oats
2 cups butterscotch chips

Preheat oven 375 degrees.

Combine dry ingredients(except oats and chips) in one bowl, wet in another. Gradually combine. Stir in oats and chips. Drop by tablespoonfuls on ungreased cookie sheets.

Bake 7-8 min for chewy cookies, 9-10 min for crispy cookies.

I like oatmeal cookies with butterscotch chips (not a fan of raisins here).
Oatmeal Scotchies
1/2 pound (2 sticks) margarine or butter, softened
3/4cup granulated sugar
3/4cup firmly packed brown sugar
2eggs
1teaspoon vanilla
1-1/4cups all-purpose flour
1teaspoon baking soda
1/2teaspoon salt (optional)
3cups Quaker® Oats (quick or old fashioned, uncooked)
1package (11 oz.) butterscotch flavored chips

preparation
1. Heat oven to 375°F. In large bowl, beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda and salt; mix well. Add oats and butterscotch morsels; mix well.
2. Drop dough by level tablespoonfuls onto ungreased cookie sheets.
3. Bake 7 to 8 minutes for a chewy cookie or 9 to 10 minutes for a crisp cookie. Cool 2 minutes on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Servings: ABOUT 4 DOZEN

Seven Layer Magic Cookie Bars are also good with butterscotch chips
1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter or margarine, melted
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 cup (6 ounces) butterscotch-flavored chips
1 cup (6 ounces) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts

Instructions
Preheat oven to 350°F (325°F for glass baking pan). In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of 13x9-inch baking pan.
Pour EAGLE BRAND® evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork.
Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars or diamonds. Store leftovers covered at room temperature.

excellent as FROSTING on spice cake. Its very easy to make. Melt about half a bag of the CHIPS and add to about HALF an 8oz. bowl of COOL WHIP. temper the cool whip so it doesn't get runny. make as thick as you like. Good w/ choc. chips 2. gets firm, stays creamy... another Great one is BUTTERSCOTCH BARK made w/ graham crackers or saltines. Pile desired amount of butterscotch chips in the middle of crackers heat about 1 minute { in 325' oven } or until they spread easily over surface, quickly top w/crushed pecans or any nut. chill, break graham crackers along seems. especially good w/choc. chips and toasted almonds or nuts of choice... chocolate bark

MMMM...I usually follow the nestle toll house recipe on the back of their bags of choc. chips, but I'll only use one third of the choc. chips called for. The other 2/3rds I'll use p-nut butter chips, mini m and m's, butterscotch, or they even make crushed up heath bars.

MAGIC BARS. My mom makes them during Christmas. Here is the link to the recipe but instead of 1 bag of the chocolate chips shes uses half a bag of the butterscotch chips and half of the chocolate. Trust me its out of this world!!!
