And does it matter if I peel them, or can I leave them in the shell?

I have been in food service for over 20 years and we always use the 3 day rule. Better safe than sorry. I have never given anyone food poisoning in all my years in food service.

2-3 days is okay. Don't peel them.

At least a week. Don't peel them. You can tell if it's not good anymore when you peel it and it's mushy.

I'd eat them within a day or two. But, you know, if you crack the shell and it stinks that means it's bad.
