Hong Kong is my favorite city... but for your needs, I recommend Beijing. Don't miss touring the Great Wall. Best shows the cultural attributes of the people. Has nice landscapes and best food.
In another time, if you love to shop, visit Hong Kong and see the City of Lights. Remember your childhood while in Disneyland and Ocean Park.

It depends upon what you like. Hong Kong is a busy, economic giant with much leftover from British rule. Beijing has been the capital of China since the 1400s, and has the Forbidden City, Temple of Heaven, Ming Tombs, Great Wall, etc. - if you like history and ancient culture. For a modern, developing city with many up-scale malls and stores, Shanghai is the best choice, but it is not an ancient city - and most of its history has been influenced by Western powers. To put it into a US perspective: Hong Kong is like Beverly Hills, Beijing is like Washington, DC, and Shanghai is like New York.
Food in any of the three is as varied as China. There is more Cantonese food in Hong Kong, of course, and more northern food in Beijing. Shanghai has so many restaurants that they are impossible to count.
Scenery is better in Beijing (some small hills)and Hong Kong (the visit from Victoria Peak is fantastic) than in Shanghai (rather flat).
Depending upon your interests, I would suggest a visit to both Beijing and Shanghai (omitting Hong Kong) since it is only a 2 1/2-hour flight between them. I'm prejudiced (I live in Shanghai), but I don't like Hong Kong (much too expensive). Anything you want to buy in Hong Kong you can buy in Shanghai - cheaper.

China is a large country. Hong Kong is a busy modern, western city with Asian cultures. Beijing has many sights and the great wall is near by. Shanghai is an industrial city. So, if it is only one go to Beijing.

I visited China and I felt emotional when I touch the great wall. It make me think that I am touching something that was left to me from a long long time ago where the other 2 cities just can match up. But there are all fun to visit.
You will get some great photos in beijing. There views of the great city as well as the memorable historical sites.

if it's the first time you visit China and you are looking for the Traditional cultural attributes, I would say Beijing...
the best food in Hong Kong for sure!!!

You can't have all good stuff in one city. Among all these three:
Beijing retains the best cultural attributes.
Hong Kong serves the best food and is the best shopping center.
About landscape, I think all three have their own features.
So this depends on what you want to see.

i've been to all three. beijing is by far the most interesting,great wall, forbidden city, summer palace and tianamen square. for an american i thought it was an amazing place to visit. shanghai has old and new but is definitely not beijing, hong kong is dirty and crowded and prices compare to american cities
