Anyone have a recipe for easy cupcakes that will turn out really well? Any flavor really...i'm desperate! I need to make them from scratch...no box mixes. Thanks!

Probably the easiest recipe ever and the best!!! really moist and yummy!!!!
I hope you like coconut

4 eggs
1 3/4 cup sugar
1 cup flour
1 cup oil
1 cup coconut, thinly shredded
1 teaspoon lemon
Preheat oven to 350. Beat eggs and sugar. Add the oil, lemon and flour. Beat well. Fold in the coconut. Pour mixture into cupcake forms and bake for 20 minutes.

This is my absolute favorite:

Ingredients:
2 eggs
3 cups flour
2 cups sugar
1 cup cocoa
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons vanilla
1 cup shortening
1 cup hot water
1 cup sour milk


Directions:

Sour milk may be substituted by adding a teaspoon of vinegar to a cup of milk.

Mix all ingredients well until blended. Fill muffin cups 2/3 full. Bake at 350 degrees F for 25-30 minutes or until cupcakes test done.

This recipe for Easy Chocolate Cupcakes serves/makes 36 I usually cut in half.

Cappuccino Cupcakes:

40 min 15 min prep
12 servings

1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup sugar
2 eggs
1/2 cup brewed coffee
1 1/2 teaspoons instant coffee granules
1 teaspoon vanilla extract
1 cup prepared vanilla frosting

1. Heat oven to 350 degrees.
2. Line 12 muffin cups (standard size).
3. In bowl, mix together flour, baking powder, allspice, cinnamon and salt.
4. Beat butter and sugar about 2 minutes until light colored and smooth.
5. Add eggs one at a time, beating well after each egg.
6. On low speed, add floour mixture, alternating with brewed coffee.
7. Fill each muffin cup with 1/3 cup each.
8. Bake at 350 for 25 minutes, or firm to the touch.
9. Let cupcakes cool in pan on wire rack for 5 minutes, and then remove from pan and let cool completely.
10. While cooling cupcakes, in a small bowl combine instant coffee, vanilla and 1 tsp of warm water.
11. Stir until coffee is disolved.
12. stir in vanilla frosting until blended and no streaks remain.
13. Frost cupcakes.

Ingredients• 2 1/4 cups all purpose flour
• 1 1/3 cups sugar
• 3 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup shortening
• 1 cup milk

Easy Cupcake Recipe DirectionsPreheat oven to 350 degrees. Line cupcake pans with paper liners.

Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add shortening, milk, and vanilla. Beat for 1 minute on medium speed. Scrape side of bowl with a spatula.

Add eggs to the mixture. Beat for 1 minute on medium speed. Scrape bowl again. Beat on high speed for 1 minute 30 seconds until well mixed.

Spoon cupcake batter into paper liners until 1/2 to 2/3 full.

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

Cool 5 minutes in pans then remove and place on wire racks to cool completely.

Once cupcakes are completely cooled, frost with your favorite frosting recipe or decorate as you desire.

FRESH APPLE CUPCAKES

2/3 c. all-purpose flour
1/3 c. whole wheat flour
1/3 c. sugar
1/2 tsp. baking soda
1/2 tsp. ground ginger
1/3 c. vegetable oil
1 egg
1 1/3 c. cored, chopped apple, unpeeled
1 tsp. vanilla extract

Preheat the oven to 350 degrees. Line 6 muffin cups with paper or foil baking cups. Sift the flour, sugar, baking soda, and ginger together into a bowl. Add oil, egg, apple, and vanilla and stir just until all of the flour is mixed in. Divide the batter among the lined muffin cups. Bake the cupcakes until they are puffy and nicely browned, 35 to 40 minutes. Makes 6 cupcakes.

buy "Vegan cupcakes take over the world" it has every vegan cupcake recipe, and they are all to DIE for. seriously, my family wont let me stop baking. These are better than cupcakes with dairy.
