i am not making bread or wine. i just want to know what factors are necessary for the production of carbon dioxide in yeast.

CO2 is the by-product of yeast consuming fermentable sugars (primarily glucose and dextrose). This is done in an anaerobic environment at a ratio of around 4 lbs of sugar per gallon of water. In the presence of oxygen, the yeast consumes the sugars and it multiplies. When all the oxygen is consumed in this process, the production of CO2 and ethanol begins (fermentation).

Well, theres a problem when you use yeast to produce co2 and that it produces alcohol also. But since you asked simple water sugar and a pack of bread yeast, this is how moonshiners produce a sugar liquor (100 proof moonshine) by distilling this mix.

You need sugar, yeast and water
I did this experiemnt with my kindergarten class and put a balloon over the mouth of a soda bottle with the mixture inside and the CO2 blew up the balloon. Check out this web site:

Carbohydrates. Sugar or starch. You need a little sugar to get the starch going though. You might need the right yeast though. What are you making? bread or wine? And please don't phrase your question that way. I was going to post an obnoxious joke, but it was too easy.
