This gumbo comes straight from home.
* 1 tablespoon olive oil
* 1 cup skinless, boneless chicken breast halves - chopped
* 1/2 pound pork sausage links, thinly sliced
* 1 cup olive oil
* 1 cup all-purpose flour
* 2 tablespoons minced garlic
* 3 quarts chicken broth
* 1 (12 fluid ounce) can or bottle beer
* 6 stalks celery, diced
* 4 roma (plum) tomatoes, diced
* 1 sweet onion, sliced
* 1 (10 ounce) can diced tomatoes with green chile peppers, with liquid
* 2 tablespoons chopped fresh red chile peppers
* 1 bunch fresh parsley, chopped
* 1/4 cup Cajun seasoning
* 1 pound shrimp, peeled and deveined
DIRECTIONS
1. Heat oil in a medium skillet over medium high heat, and cook chicken until no longer pink and juices run clear. Stir in sausage, and cook until evenly browned. Drain chicken and sausage, and set aside.
2. In a large, heavy saucepan over medium heat, blend olive oil and flour to create a roux. Stir constantly until browned and bubbly. Mix in garlic, and cook about 1 minute.
3. Gradually stir chicken broth and beer into the roux mixture. Bring to a boil, and mix in celery, tomatoes, sweet onion, diced tomatoes with green chile peppers, red chile peppers, parsley, and Cajun seasoning. Reduce heat, cover, and simmer about 40 minutes, stirring often.
4. Mix chicken, sausage, and shrimp into the broth mixture. Cook, stirring frequently, about 20 minutes.

CLASSIC ORIGINAL "TEXAS" CHICKEN FRIED
STEAK
2 c. of all purpose flour
Salt and pepper to taste
2 c. milk Pure vegetable shortening for frying
Place the round steak on a cutting board, trim and discard bone and excess fat. With a meat mallet, pound each piece on both sides, going over meat twice in opposite directions. Set aside. Combine flour with salt and pepper. Place a 10 inch, cast iron skillet (others will work but cast iron give the best results) over a medium flame and add shortening to start heating. Dip the steaks in milk, then dredge both sides in the seasoned flour, patting to work in the flour and seasonings. Test temperature of shortening by sprinkling a few drops of milk into it. The milk should sizzle. Add steaks, taking care not to crowd them, and cook until golden brown on both sides and fully cooked. This will take 2 to 3 minutes on each side. Serve with cream gravy (below).
Serves 4.
THE GRAVY:
3 c. milk
2 to 3 tbsp. all purpose flour
4 to 5 tbsp. pan drippings
Salt and pepper to taste
NIGHT IN OLD SAN ANTONIO TEXAS CAVIAR
1/2 onion, chopped
1 bunch green onion, chopped
1 green pepper, chopped
6 jalapeno chilies, minced
1 tbsp. garlic, minced
2 tomatoes, diced
8 oz. bottle zesty Italian dressing
1/3 bunch cilantro, chopped
1 can Hominy, drained
2 cans black eyed peas, drained
Combined all ingredients and refrigerate 2 hours. Serve with corn chips or tortilla chips.

Texas Spaghetti:
This is not your ordinary spaghetti, In fact, it is more like a casserole, but I like it.
45 min 15 min prep
6-8 servings
2 lbs ground sirloin
1 onion, chopped
2 cans tomato soup, undiluted
1 green pepper, chopped
1 package egg noodles or spaghetti, cooked and drained
2 cups mozzarella cheese
2 cans condensed golden mushroom soup, undiluted
1 can sliced black olives
1/2 cup parmesan cheese
1. Brown meat,and chopped onion.
2. Add tomatoe soup,green pepper and noodles.
3. Cover and simmer 10 minutes.
4. Pour 1/2 of mixture into casserole.
5. Layer with mozzerella cheese, golden mushroom soup, black olives, ending with mozzerella cheese and the parmesean last.
6. COVER AND COOK 350F degrees for 30 MINUTES.

INGREDIENTS:
3 pounds lean beef, coarsely ground or cut in small cubes
1/4 cup chopped onion
3 tablespoons vegetable oil
6 cups water
2 bay leaves
1/4 cup chili powder
1 tablespoon salt
8 to 10 cloves garlic, minced
1/2 teaspoon ground cumin
1 teaspoon oregano leaves, crushed
1/2 teaspoon ground cayenne pepper
1/4 teaspoon black pepper
1 tablespoon sugar
3 tablespoons sweet Hungarian paprika
3 tablespoons flour
6 tablespoons cornmeal
cold water
PREPARATION:
In a 6-quart saucepan, sear beef with onion in vegetable oil until beef is no longer pink. Add water, bay leaves, chili powder, salt, garlic, cumin, oregano, cayenne pepper, black pepper, sugar, and paprika.
Simmer, covered, 2 hours. Cool. Refrigerate overnight so flavors will mellow. Skim off the solidified fat. Reheat. Combine flour and cornmeal; add a little cold water to make a smooth paste-like mixture. Add paste mixture to chili. Cook, stirring, for about 6 to 8 minutes longer. Remove bay leaves before serving.
Serves 6.

Edna’s Armadillo Eggs
Mix together:
½ lb. Owens Hot Sausage
½ lb. shredded Monterey Jack cheese
1½ cups Bisquick
And enough water to be able to pat these into little pancakes.
Seed a whole pickled jalapeno pepper and place a small piece of monterey jack cheese inside the pepper. Place stuffed jalapeno on top of a little pancake and close pancake to seal, forming into the shape of an egg.
Brush eggs with an egg wash (1 egg beat with 1 Tbsp. water). Bake in a slow oven (about 325ºF) for 25-30 minutes. Serve warm or at room temperature.

KING RANCH CHICKEN CASSEROLE
1 large onion, chopped
1 large green bell pepper, chopped
2 tablespoons vegetable oil
2 cups chopped cooked chicken
1 (10 3/4-oz) can cream of chicken soup, undiluted
1 (10 3/4-oz) can cream of mushroom soup, undiluted
1 (10-oz) can diced tomato and green chiles
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
12 (6-inch) corn tortillas
2 cups (8 oz) shredded Cheddar cheese, divided
Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in chicken and next 7 ingredients; remove from heat.
Tear tortillas into 1-inch pieces; layer one-third of tortilla pieces in bottom of a lightly greased 13- x 9-inch baking dish. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice. Bake at 350° for 30 to 35 minutes.
Note: Freeze casserole up to 1 month, if desired. Thaw in refrigerator overnight, and bake as directed.
Yield: Makes 6 to 8 servings

PECAN AND CHOCOLATE PIE
Ingredients:
Crust:
1cup all purpose flour
6tablespoons (3/4 stick) unsalted butter, chilled, cut into 1/2-inch pieces
1tablespoon sugar
1/2teaspoon salt
2tablespoons (or more) ice water
Filling:
4ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
2tablespoons (1/4 stick) unsalted butter
1/2cup (packed) dark brown sugar
3large eggs
1/4teaspoon salt
3/4 cup light corn syrup
1 1/2cups pecan pieces, lightly toasted
For crust:
Combine first 4 ingredients in processor. Using on/off turns, process until mixture resembles coarse crumbs. Drizzle 2 tablespoons ice water over mixture. Process just until moist clumps form, adding more water by teaspoonfuls if mixture is dry. Gather dough into ball. Flatten into disk. Wrap dough in plastic and refrigerate 30 minutes. (Can be prepared 1 day ahead. Keep refrigerated.)
Preheat oven to 325°F. Roll out dough on floured surface to 13-inch round. Transfer to 9-inch-diameter glass pie dish. Trim overhang to 1 inch; fold under and crimp decoratively. Set aside.
For filling:
Stir chocolate and butter in heavy small saucepan over low heat until melted. Cool slightly.
Whisk brown sugar, eggs and salt in large bowl to blend. Whisk in corn syrup and chocolate mixture. Sprinkle pecans over unbaked crust. Pour filling over pecans. Bake until crust is golden and filling is puffed, about 55 minutes.
Cool pie completely on rack.
Makes 6 to 8 servings.
